Installation

Install 4" legs by threading studs into provided holes at the bottom for countertop models.

Leveling

Use spirit level or water to adjust leveling feet for front-to-back and side-to-side balance.

Vent Hood

Install exhaust system above steamer to vent steam and combustion gases as per NFPA standards.

Plumbing Connections

Connect water supply and drain lines according to codes, ensuring proper water pressure and drain setup.

Gas Connection

Connect gas line per data plate, ensuring adequate supply, correct pressure, and using approved pipe compound.

Testing the Gas Supply Piping

Test gas supply lines for leaks using a soap and water solution before connecting to the unit.

Electrical Connection

Connect the three-prong grounding plug to a properly grounded outlet. Do not remove grounding prong.

Test Procedure

Perform thorough tests of water, drain, electrical, and gas connections before initial operation.

Operation

Controls

Familiarize with main power switch, ready light, cooking light, timer, and ignition lights for proper operation.

Startup Procedure

Open gas supply, close doors, turn power ON, and check ignition light function.

Stand By

Set timer to OFF position and leave the compartment door slightly open.

Steaming

Place food, set timer, and close door. Cooking cycle may be interrupted by opening the door.

Daily Shutdown Procedure

Turn power switch OFF and close manual gas shutoff valve for daily shutdown.

Procedure for Complete or Prolonged Shutdown

Turn timer/power OFF, close valves, and disconnect power cord for complete shutdown.

Steam Cooking

Steamer efficiently cooks vegetables and other foods. Time control is crucial for optimal results.

Preparation

Prepare foods by cleaning, cutting, etc. Use appropriate pans for different food types and juices.

Compartment Accommodation

Steamers accept combinations of 12" x 20" pans, solid or perforated, for flexibility.

Cleaning

Disconnect power before cleaning. Clean interior, door gasket, and drain openings regularly.

Maintenance

Deliming

Refer to the water filter manual for specific deliming instructions and procedures.

Steam Unloader Ports

Check steam unloader ports for blockages if high steam pressure is detected.
