Function Description:
The Waldorf Electric Bratt Pan is primarily used for a wide range of cooking tasks in commercial settings, including braising, shallow frying (though not specifically designed for it), boiling, stewing, and simmering large quantities of food. Its robust construction and precise temperature control make it suitable for high-volume operations. The pan's tilting mechanism facilitates easy emptying and cleaning of cooked contents. The electric models feature an electric thermostat burner control and an over-temperature safety cut-out for enhanced safety and operational reliability. The tilting mechanism also incorporates a burner cut-out feature, which automatically switches off the heating elements when the pan is tilted, preventing accidental spills or burns and ensuring operator safety.

- Controls: The appliance features a temperature control knob with graduations from 1 to 10 for heat control, a water flow control valve (OFF position and graduated flow), a heating indicator lamp (amber), and a power indicator lamp (green). Electric tilt models (BP8080EE and BP8120EE) also include electrical tilt controls with 'UP' and 'DOWN' buttons.
- Operation:
- Turning On/Setting Temperature: Rotate the thermostat control knob anti-clockwise to the desired heat setting. The main element operates only when the pan is in the flat cooking position.
- Water Supply: The water supply valve is turned ON by setting the temperature control thermostat to hold the solenoid valve open. Water flow can be adjusted by turning the water tap anti-clockwise (1.5 turns for fully open). The pan lid must be up and the pan in the down position to add water.
- Tilting the Pan:
- Manual Tilt Models (BP8080E, BP8120E): Turn the manual tilt handwheel clockwise to tilt the pan. The heating element automatically switches 'Off' when the pan is raised and 'On' when returned to the down position.
- Electric Tilt Models (BP8080EE, BP8120EE): Depress the pan tilt control switches on the front panel (with corresponding direction arrows) and hold as required. Releasing the switch stops the tilt operation. The electric lift mechanism only operates if the pan lid is in the raised position.
- Turning Off: Set the thermostat control knob to the 'OFF' position to switch off the main element.
- Safety Precautions: Operators must exercise great care to use the equipment safely, guarding against fire risk. The appliance must not be left unattended. It is recommended that a regular inspection by a competent serviceman ensures correct and safe operation. Flammable vapors or liquids should not be stored or used near the appliance. Aerosols should not be sprayed near the appliance during operation. The pan lid and handle ends can become hot.
Maintenance Features:
- Cleaning:
- General: Regular cleaning is essential for performance and longevity. Always turn off the electrical supply before cleaning. The appliance is not waterproof; do not use high-pressure water or steam jets, or pour water directly over it. Avoid wire brushes, combustible liquids, harsh abrasive detergents, sharp scrapers, strong solvents, caustic detergents, chloric/bleaching detergents, or saline/sulfuric acid preparations, as these can damage the appliance. Protective gloves should be worn.
- After Each Use: Clean the interior of the pan with a mild detergent and hot water solution using a soft cloth or bristled brush. Dry thoroughly. Clean the exterior similarly.
- Daily Cleaning: Clean the control panel with a soft cloth moistened with a mild detergent and hot water solution, avoiding excessive water, and dry thoroughly. Clean the interior and exterior of the pan as after each use.
- Weekly Cleaning: If usage is high, perform weekly cleaning more frequently. Ensure all detergent/cleaning material is entirely removed from steel components to prevent rust.
- Stainless Steel Surfaces: Clean with hot water, mild detergent, and a soft scrubbing brush. Control knobs are push-fit and can be removed for cleaning. Baked-on deposits may require a quality stainless steel cleaner or wool, applied when cold and rubbed in the direction of the grain. Dry all components thoroughly and polish with a soft dry cloth.
- Periodic Maintenance: Regular and thorough cleaning, along with periodic checks and adjustments of controls and mechanical parts by a competent serviceman, are recommended. Small faults should be addressed promptly to prevent complete breakdowns. Servicing is recommended every 6 months.
- Replacement Parts: Only genuine authorized replacement parts should be used. Instructions supplied with parts must be followed. When ordering, quote the part number and description, along with the Model and Serial Number from the rating plate.
- Fault Finding: A dedicated section provides guidance for diagnosing and resolving common issues such as over-temperature thermostat cut-out, main element not operating, and no pan filling water. For complex issues, contact an authorized service agent.
