This document outlines the operations and maintenance procedures for Wittco Food Holding & Transport Cabinets, specifically the 1220 series models including 1220-3, 1220-3-PT, 1220-7, 1220-8, 1220-8-IHD, 1220-15-BC, 1220-20-BC, 1220-7-BC, and 1220-8-BC. These cabinets are designed to efficiently and sanitarily hold and transport prepared food products, making them suitable for various foodservice operations such as schools, hospitals, restaurants, and correctional facilities.

The primary function of the Wittco 1220 series cabinets is to maintain bulk prepared foods at proper serving temperatures during holding and transport. These units are versatile, accommodating third, half, or full-size steam table pans of various depths, as well as 1/1 gastronorm pans. This adaptability ensures that a wide range of food items can be kept warm and ready for service, enhancing efficiency in busy kitchen environments and catering operations.

For optimal usage, it is recommended to pre-heat the cabinet at its highest temperature setting for 30-45 minutes before placing food inside. The control panel features a dual indicator operating light (amber and red), a dial thermometer, and a full-range thermostat. Upon connecting the cabinet to an appropriate power source, the red indicator light illuminates, signifying power. Rotating the thermostat knob to setting "5" initiates the heating elements, causing the amber indicator light to turn on. This amber light cycles on and off as the heating elements engage and disengage to maintain the set temperature. The dial thermometer displays the interior temperature, which should average approximately 150 degrees F at setting "5." Users are advised to monitor the food product's temperature directly to ensure it remains at safe and proper serving temperatures, as the cabinet's air temperature will fluctuate with the heating element cycles. The thermostat setting determines the average air temperature, with higher numbers corresponding to higher cabinet temperatures and lower numbers to lower temperatures.

Maintenance of the Wittco 1220 series cabinets is straightforward, focusing on cleanliness and timely replacement of electrical components. The interior of the cabinet should be cleaned regularly, especially after food spills, using a mild soap and water solution. Harsh chemicals or abrasive pads should never be used to clean the cabinet, as they can damage surfaces. The tray slides are removable for easier cleaning in a sink.

When electrical components require replacement, it is strongly recommended to use only Wittco Foodservice Equipment replacement parts to ensure compatibility and proper operation. Detailed instructions are provided for replacing the thermostat, indicator light, and heating element.

For thermostat replacement, the cabinet must first be disconnected from its power source. The top cover is removed by unscrewing and lifting it to expose the thermostat. The black thermostat knob is then loosened from the control panel, ensuring it is in the "OFF" position before removal. Users should note the existing wiring arrangement and refer to wiring diagrams. The wire leads connected to the thermostat are disconnected, and the screws holding the temperature sensing bulb are loosened, allowing its removal from the cabinet interior. The temperature sensing bulb must always be replaced along with the thermostat. Finally, the two screws securing the thermostat to the control panel are removed, and the old thermostat is taken out. Installation of the new thermostat and temperature sensing probe follows the reverse procedure, after which the top cover is reinstalled, and the cabinet is reconnected and tested.

Indicator light replacement also begins with disconnecting the cabinet from its power source. The top cover is removed to access the indicator light. Wiring connections should be noted, and leads disconnected from the light. The side-mounted retaining clips on the indicator housing are depressed to remove the light from the front of the control panel. The new indicator light is pushed into place until the retaining clips snap, electrical leads are reconnected, the top cover is reinstalled, and the cabinet is reconnected and tested.

Heating element replacement similarly requires disconnecting the cabinet from its power source. The cabinet door is opened, and the bottom-mounted element cover is removed. Retaining screws securing the element to the interior rear of the cabinet are removed. The element is gently pulled from its housing to expose the electrical lead wire connectors, which are then disconnected from the defective element. The new element's lead wires are connected to the cabinet's lead wires, and the residual wire is tucked back through the housing hole until the replacement element rests against the interior rear wall. The element retaining screws and protective element cover are reinstalled, and the cabinet is reconnected and tested.

Thermometer replacement also starts with disconnecting the cabinet from its power source. The top cover is removed to expose the thermometer. The thermometer screws and retaining clips in the interior top of the cabinet are identified and removed. The thermometer sensing bulb is pulled through the access hole in the top of the cabinet. The retaining nuts securing the thermometer to the housing on the back of the control panel are removed, and the thermometer is pushed out from the rear through the control panel. Installation of the replacement thermometer follows the reverse procedure, after which the cabinet is reconnected and tested.

In case of repair or adjustment, operators can follow the procedures in this manual or contact an authorized Wittco dealer or service agency. For warranty repairs, prior authorization from Wittco is required. Wittco offers a ninety-day labor warranty and a one-year parts warranty from the date of purchase, provided the product is installed and maintained according to Wittco's instructions. The warranty excludes issues arising from product misuse, tampering, misapplication, improper voltage application, or recalibration of thermostats or high limit switches, and does not cover coated incandescent light bulbs, heat lamps, or glass components. Wittco's liability is limited to repair or replacement by an authorized service agency, or replacement of parts under warranty for buyers outside the US or Canada. Portable products must be delivered to an authorized service agency at the buyer's expense. Wittco will not be liable for consequential or incidental damages, including labor costs, lost products, or lost profits.
