Overview

The Wolfgang Puck Pressure Oven, model BEPO1002 Series, is a countertop appliance designed for faster cooking and improved flavor through low-pressure and even heat distribution. It offers a 0.8 cubic foot capacity and features a brushed stainless steel exterior with easy-to-read controls.

Function Description:

The oven operates in two primary modes: Pressure Mode and Standard Mode. In Pressure Mode, the oven maintains a low pressure (1 psi) within the sealed chamber, allowing for significantly reduced cooking times and enhanced moisture retention. For example, a 10-pound turkey can be roasted in under an hour, compared to over 2.5 hours in a traditional oven. Baked goods also benefit from improved fullness without the need for convection fans or rotating pans. Standard Mode functions like a conventional toaster oven, with the door remaining slightly ajar to vent freely during cooking. This mode is suitable for recipes that do not require pressure cooking, such as toasting.

The oven offers five distinct cooking functions:

  • Bake Function: Utilizes both top and bottom heating elements to maintain a selected temperature. In pressure mode, this allows for faster baking.
  • Toast Function: Operates with both top and bottom heating elements at 450°F in standard mode for even toasting. Pressure mode is not necessary for toasting.
  • Roast Function: Employs both top and bottom heating elements to maintain a selected temperature. In pressure mode, roasting times are significantly reduced (e.g., roasts cook about 50% faster).
  • Broil Function: Uses the top heating elements to broil food at 450°F. Preheating for 10 minutes is recommended for best results. Broiling should always be done in standard mode, and the oven should not be left unattended.
  • Warm Function: Maintains a temperature of 175°F to keep food warm. This function is not used in pressure mode.

  • Timer: 120-minute mechanical timer with an automatic shut-off and bell. For cooking times exceeding 2 hours, the timer needs to be reset.
  • Pressure Level: 1 psi (in Pressure Mode)
  • Power Cord: 3-prong grounded cord.

Usage Features:

  • Controls: The oven is equipped with a Function Knob (Bake, Toast, Roast, Broil, Warm), a Temperature Knob (up to 450°F), and a Timer Knob (up to 120 minutes).
  • Vent Release Valve: This valve has two settings: SEAL (to maintain pressure) and VENT (to release pressure). It rests loosely on top of the oven to allow for proper pressure regulation.
  • Sealing Lever: This lever has two positions: STANDARD (for conventional cooking) and SEAL (for pressure cooking). It must be lowered to the SEAL position for pressure cooking and raised to STANDARD after pressure is vented.
  • Door Release Button: Used to open the oven door. The door should never be forced open without using this button, especially after pressure cooking.
  • Indicator Lights: A red Power Indicator Light illuminates when the timer is on, and a green Ready Light indicates when the oven has reached the set temperature, cycling on and off during cooking.
  • Rack Positions: The oven offers multiple rack positions for versatile cooking.
  • Cooking Containers: The included DRIP/BAKING PAN is suitable for various foods. Standard metal, oven-safe glass, or ceramic bakeware can be used. Many nonmetallic containers suitable for microwave ovens are also compatible.
  • Safety Features: Tempered safety glass door, automatic shut-off when the timer expires, and a warning against opening the door or raising the sealing lever before pressure is fully vented.

Maintenance Features:

  • Cleaning: The oven should be unplugged and cooled completely before cleaning.
    • Accessories: Baking/Drip Pan, Baking/Broil Rack, Roasting Pan, Crumb Tray, and Rack Removal Tool can be washed in warm soapy water or in the dishwasher.
    • Interior: Can be cleaned with a damp soapy cloth. For stubborn stains, oven cleaner can be applied to a damp sponge. Heating elements should not be moved during cleaning.
    • Sealing Gasket: Should be regularly inspected for damage (tears, dislodgement) and wiped gently as needed.
  • Crumb Tray: Easily accessible by opening the door and sliding it out from underneath the bottom heating elements. It should always be in place during oven use.
  • Rack Removal Tool: Provided for safely removing the Baking Rack or Drip Pan. Not recommended for heavy casserole dishes.
  • Trial Run: A trial run is recommended before first use to burn off any protective substances on the heating elements, which may produce a small amount of smoke and odor.

Helpful Hints:

  • Preheating: Always preheat the oven to the desired temperature before adding food.
  • Food Placement: Distribute food evenly inside the oven, ensuring equal space around pans and above/below.
  • Roasting Meats: Use the highest rack position to ensure good caramelization, avoiding contact with upper heating elements.
  • Steaming: Water can be added directly to the DRIP/BAKING PAN for steaming foods like fish and vegetables.
  • Thawing: For best results, thoroughly thaw food before baking, with the exception of packaged frozen dinners/pizzas.
  • Pressure Cooking Times: Poultry cooks about 70% faster, roasts about 50% faster, and casseroles/vegetables/baked goods about 25% faster in pressure mode. Always check internal temperatures for meats.
  • Vent Release Valve: If the valve does not turn, unplug the oven, turn the timer knob to off, and apply downward pressure while twisting the valve left and right with a hand towel or oven mitt. Contact customer service if a replacement part is needed.
