Overview

This document is an owner's manual for Bayou Classic Double Jet Cookers, specifically models SP2/SS2 (18-in Dual Jet Cooker), SP40/SS40 (22-in Dual Jet Bayou Cooker), and SV22 (18-in Dual Jet Vortex Cooker). It provides safety alerts, assembly and operating instructions, and general maintenance and storage guidelines. The manual emphasizes that it is for Barbour International Bayou Classic® products only and should not be used for commercial purposes.

Function Description:

The Bayou Classic Double Jet Cooker is a portable gas appliance designed for outdoor use to heat water for boiling or steaming food. It has a greater heat output than traditional kitchen stoves and is intended to be used with a large cooking vessel (pot). The appliance is designed to work exclusively with the hose and regulator supplied with the product. It is explicitly stated that this appliance is not designed for frying of any kind, including frying turkeys.

Important Technical Specifications:

  • Fuel Type: Liquid Propane (LP) gas in a self-contained gas supply system (tank).
  • LP Cylinder Specifications:
    • 9.1 Kg/20 lbs; 31.75 cm/12.5 in diameter x 45.72 cm/18 in tall.
    • Type-1 gas cylinder valve outlet.
    • Over-Filling Protection Device (OPD).
    • Collar to protect the cylinder valve.
    • Arranged for vapor withdrawal.
    • Protective cap.
    • Must be constructed and marked in accordance with U.S. Department of Transportation (DOT) or CAN/CSA-B339 standards.
  • Hose and Regulator: 30-PSI Hose and Regulator (pre-assembled), 48 in/121 cm High Pressure Hose. The Hose Valve Regulator (HVR) is an independently CSA certified product and must be replaced every two years with Model #M5HPR-30.
  • Cooking Vessel Size:
    • Never use a cooking vessel smaller than 35.6 cm/14 in. diameter and less than 56.8 L/60 Qt in volume.
    • Never use a cooking vessel larger than 61 cm/24 in. diameter and more than 153.3 L/162 Qt in volume.
  • Water Level: A minimum of 8 cm/3 in. must always be maintained between the water level and the top of the vessel.
  • Clearance:
    • 3 m/10 ft clearance from combustible materials.
    • LP cylinder must be at least 50.8 cm/20 in away from the appliance.
    • Overhead must be clear of combustible materials.

Usage Features:

  • Outdoor Use Only: Must not be used in a building, garage, or any other enclosed area, nor on or under apartment/condominium balconies or decks.
  • Placement: Place on a level, stable noncombustible surface (brick, concrete, or dirt). Position the cooker DOWNWIND from the LP cylinder.
  • Safety First:
    • Sober adult operation only.
    • Never operate unattended.
    • Keep children and pets away from the cooking area.
    • Always use a properly functioning thermometer to know the cooking liquid temperature.
    • Wear protective clothing, insulated mitts/gloves, and close-toed shoes when operating.
    • Always have a Type BC or ABC fire extinguisher readily accessible.
  • Lighting Instructions:
    • Ensure LP Cylinder Valve and Brass Valve are completely off (closed) before lighting.
    • Slowly turn on LP Cylinder Valve one full turn.
    • Position a fireplace match or long lighter over the Jet Burner Tube, then slowly turn on the regulator.
    • If ignition doesn't occur in 5 seconds, turn off both valves, wait 5 minutes for gas to dissipate, and repeat.
    • The regulator is equipped with a Gas Flow Limiting Device that restricts gas flow if activated by a rapid release of gas.
  • Cooking Process:
    • Confirm vessel is centered on the cooker frame.
    • Place basket into the pot.
    • Fill vessel with water until the basket is approximately halfway submerged.
    • After water is heated, carefully add food.
    • Control flame by adjusting the regulator knob and, if applicable, the air shutter for an ideal blue flame.
    • Lower food and accessories S-L-O-W-L-Y into hot cooking liquid to prevent splashing or overflow.
  • Prohibited Use:
    • Not for heating oil or grease.
    • Not for use as a heater.
    • Do not place an empty cooking vessel on the appliance while in operation.
    • Never use glassware, plastic, or ceramic cookware.
    • Do not move the appliance or cooking vessel while in use.
    • Do not walk between the cooker and the propane tank (tripping hazard).
    • Do not position cooker on wood, asphalt, or plastic/rubber mats.

Maintenance Features:

  • Pre-Use Inspection:
    • Ensure proper assembly and connection to LP cylinder.
    • Inspect hose and tank for abrasion, wear, cuts, or leaks.
    • Confirm nothing obstructs the burner.
    • Perform a Gas Leak Test.
  • Gas Leak Test:
    • Required after assembly, LP cylinder refill, component replacement, moving the cooker, or at least once a year/every 60 days of disuse.
    • Use a 50% water and 50% liquid dish soap mixture.
    • Apply mixture to LP cylinder valve, regulator connections, gas supply hose, and cooker connection.
    • Look for growing bubbles; if found, tighten connections and retest. If leaks persist, terminate use.
  • Burner Cleaning:
    • Before each use, light the cooker for 5-7 minutes to burn off manufacturing oil/residue.
    • Check for obstructions (insects, nests) in and around the burner.
    • Use a narrow bottle brush or stiff wire to clean the gas inlet tube.
    • Confirm jet orifice or burner tube is not blocked.
    • Use a water hose or compressed air to flush out debris (wear eye protection).
    • NEVER disassemble the cast iron banjo burner; contact Barbour International, Inc. for replacement if damaged.
  • General Cleaning:
    • Clean spills after cooking once the cooker is completely cool by rinsing.
    • Keep the appliance area clear of combustible materials, gasoline, and other flammable vapors/liquids.
    • Do not obstruct combustion and ventilation air flow.
    • Keep cylinder enclosure ventilation openings clear.
  • Storage:
    • Always turn off gas supply and disconnect the hose and regulator from the LP cylinder.
    • Place regulator on the appliance frame when not connected to the LP cylinder to avoid damage and trip hazards.
    • Store appliance in a dry place.
    • If storing indoors, detach the LP cylinder and store it outside.
    • For long-term storage, cover the burner and HVR with a plastic bag.
    • Do not store in corrosive environments (damp areas, saltwater/marine environments).
  • Post-Cooking:
    • Turn off gas.
    • Do not touch, move, or store the appliance or cooking liquids until they have cooled to 45°C/115°F or less.

Warranty:

Barbour International, Inc. provides a one (1) year limited warranty from the date of purchase, covering defects in material and workmanship for all parts, provided the appliance is assembled and operated according to instructions. Proof of purchase is required. The warranty is limited to repair or replacement of defective parts under normal use and service. It does not cover failures due to accident, abuse, misuse, alteration, improper installation or maintenance, or damage to the finish. The warranty disclaims all other express and implied warranties after the one-year period and limits liability for special, indirect, punitive, incidental, or consequential damages.
