PENNE PASTA WITH PINK PESTO
AND GRILLED CHICKEN SALAD
This easy salad is simply delicious any time of the year.
Serve warm as a quick and convenient dinner with a Caesar Salad on the side
or at room temperature for a light and satisfying lunch.

1/2 cup penne pasta, cooked al dente and drained
1 cup Pink Pesto
1 - 8 oz. grilled or baked chicken breast, cut into strips
2 Tbsp. toasted pine nuts
4 basil leaves
grated Parmesan cheese

1. While still warm, toss drained pasta with Pink Pesto until well coated.
2. Add the chicken and pine nuts and toss gently.
3. Top with torn basil leaves and grated fresh Parmesan cheese.
