Usage Features:

  • Dual Fuel Capability: Allows for cooking with either propane gas or charcoal/wood, offering flexibility in flavor and cooking style.
  • Temperature Control (Charcoal): Achieved by adjusting top and side dampers to regulate airflow. More air equals more heat, less air equals less heat. Charcoal grate level is adjustable to control proximity to cooking grates.
  • Gas Burner Ignition: Electronic ignition button for easy lighting. Burners should light within 3-5 seconds.
  • Match Lighting (Gas): Alternative lighting method using a match holder for safety.
  • Flame Height (Gas): Optimal flame is blue and yellow, approximately 1/2 to 3/4 inch (1.2 cm - 1.9 cm) tall on the HI setting.
  • Seasoning: Essential first step before cooking to protect the finish, reduce sticking, and prevent rust. Involves lightly coating with high smoke point oil (canola or vegetable oil) and heating the grill to approximately 450°F, then re-applying oil to grates multiple times.
  • Cooking Styles: Supports smoking (150°-250°F indirect heat), grilling (300°-450°F direct/indirect heat), and searing (450°-500°F high-temp direct heat).
  • Wood Pairing Guide: Provides recommendations for pairing different wood flavors (Alder, Maple, Cherry, Apple, Pecan, Oak, Hickory, Mesquite) with various meats and vegetables.
  • Safety Warnings: Emphasizes outdoor use only, keeping children and pets away, not moving the grill when hot, proper LP cylinder handling and storage, regular leak tests, and avoiding flammable liquids.
  • Food Safety: Recommends using a calibrated food thermometer and USDA guidelines for safe internal temperatures for meats, poultry, and seafood.

Maintenance Features:

  • Cleaning: All cleaning and maintenance should be performed when the grill is cool and the fuel supply is disconnected. Grates should be cleaned with a grill brush and lightly coated with vegetable oil after each use.
  • Ash Removal: Ashes and coals must be completely cooled before removal. Ashes should be dumped into a noncombustible metal container, saturated with water, and allowed to sit for 24 hours before disposal.
  • Rust Prevention: Uncoated steel and cast-iron parts will rust if not properly cared for. Regular seasoning and coating interior grates and bare metal with vegetable oil after each use helps prevent rust. Exterior paint can be touched up with high heat paint (Rustoleum® #241169 is recommended).
  • Burner Maintenance: Visually check burner flames and inspect for obstructions (spiders, insects, webs) before each use. Clean burner holes with a heavy-duty pipe cleaner. Ensure burner ports are properly aligned with valve openings after cleaning.
  • Hose Inspection: Inspect the gas hose before each use for damage.
  • Storage: LP gas cylinders not connected for use should be stored outdoors, upright, out of reach of children, and away from heat sources or ignition. The grill should be covered with a custom-fit grill cover (Model #5055) to protect it from elements.
  • Grease Management: Grease tray should be emptied after every use once completely cooled. A metal can can be attached to the grease cup holder or bottom shelf to catch drippings.
