Overview

This document is an assembly, care, and use manual for a Cookmaster by Masterbuilt Propane Smoker, specifically models 20051413.

Function Description

The Masterbuilt Propane Smoker is an outdoor cooking appliance designed for smoking various types of food, including beef, pork, poultry, seafood, and wild game. It uses propane gas as a fuel source and wood chips to generate smoke, imparting a distinct flavor to the food. The smoker is intended for outdoor use only and is not suitable for commercial applications or frying turkeys.

Important Technical Specifications

  • Fuel Type: Propane gas only.
  • Gas Cylinder: Uses a 20LB (9kgs) gas cylinder with a protective collar (cylinder not included).
  • Operating Temperature: Designed to operate at various temperatures, typically around 200°F (93°C) for most smoking tasks.
  • Construction Materials: Made of steel, which may rust over time if not properly maintained.
  • Dimensions (Approximate): The regulator and hose assembly has an approximate length of 17.75" (45cm) for the blue section and 12.25" (45cm) for the yellow section.
  • Clearance Requirements:
    • Minimum 10ft (3m) from overhead construction, walls, rails, or other structures.
    • Minimum 10ft (3m) clearance from all combustible materials (wood, dry plants, grass, brush, paper, canvas).
    • Cylinder must be placed UPWIND, upright 12" (30.5cm) away from the unit.
    • Ventilation openings of the cylinder enclosure must be free and clear of debris.
  • Safety Certifications: SP Certified Design Certifier.
  • Replacement Parts: A comprehensive list of replacement parts is provided, including the smoker body, door, handles, temperature gauge, burner box, burner, heat diffuser, wood chip tray with lid, water pan, water pan rack, cooking grates, rack supports, damper, ignitor, matchstick with chain, regulator/hose, drip cup, and hardware kit.

Usage Features

  • Outdoor Use Only: Strictly for outdoor use in well-ventilated areas. Not to be used inside enclosed spaces like patios, garages, buildings, tents, recreational vehicles, or boats.
  • Temperature Control: Features a control knob to adjust the burner flame, allowing for temperature regulation. The knob can be turned counter-clockwise to decrease flame and clockwise to increase it.
  • Ignition System: Equipped with an ignitor button for lighting the burner. If ignition does not occur within five seconds, users are instructed to turn off the gas, wait five minutes, and repeat. Match lighting instructions are also provided as an alternative.
  • Wood Chip System: Includes a wood chip tray with a lid and a water pan rack. Wood chips are placed in the tray to generate smoke, and the water pan helps maintain moisture during the smoking process. Both the wood chip tray and water pan must be in place during operation to minimize flare-ups.
  • Cooking Grates: Comes with multiple cooking grates that slide onto rack supports inside the smoker body, providing ample space for food.
  • Temperature Gauge: A temperature gauge is integrated into the smoker door to monitor internal temperatures.
  • Drip Management: A drip cup and grease clip are included to collect grease run-off, ensuring a cleaner cooking experience.
  • Smoking Guide: A detailed smoking chart provides recommended cooking times, charcoal/water amounts, wood chip quantities, and internal temperatures for various meats. A wood smoking guide for different flavors (Hickory, Mesquite, Alder, Pecan, Maple, Apple, Cherry) is also included, indicating suitability for poultry, fish, ham, beef, pork, and lamb.
  • Assembly: The manual provides step-by-step instructions for assembling the smoker, including attaching legs, control panel, burner box, heat shield, damper, handles, temperature gauge, cooking grates, water pan, wood chip tray, heat diffuser, and grease clip. Tools required are an adjustable wrench and a Phillips head screwdriver.

Maintenance Features

  • Regular Hardware Inspection: Users are advised to regularly inspect all hardware (nuts, screws, bolts) for tightness to ensure safe working condition.
  • Cleaning: The unit should be cleaned after each use, including special surfaces like cooking grates, using mild cleaning agents. The outside can be wiped with a damp rag. Oven cleaner should not be used.
  • Rust Prevention: As the unit is made of steel, rust may occur over time. If rust appears on outside surfaces, the area should be cleaned with sandpaper or steel wool and then covered with heat-resistant paint. Paint should never be used on inside surfaces.
  • Storage: The unit should always be covered and stored in a protected area when cold. The gas cylinder must be disconnected and stored outdoors, out of children's reach, and not in any enclosed area.
  • Hose and Burner Inspection: Before each use, the gas hose should be inspected for signs of damage (wear, cuts, leaks), and the burner and venturi tube should be checked for insects and nests to prevent blockages and potential fires.
  • Soapy Water Test: A "Soapy Water Test" must be performed every time the gas cylinder is connected or used to check for gas leaks. This test involves applying a soapy water solution to the gas cylinder valve, regulator, hose, and burner connections, looking for bubbles that indicate a leak. The test must be performed outdoors in a well-ventilated area, away from open flames, sparks, or lit cigarettes.
  • Regulator and Hose Assembly: Only the regulator and hose assembly supplied with the unit should be used. Replacement parts can be ordered from Masterbuilt Customer Service.
  • Combustion and Ventilation: The flow of combustion and ventilation must not be obstructed. Ventilation openings of the cylinder enclosure must be kept free and clear of debris.
