INGREDIENTS
• 1 tbsp extra virgin olive oil
• 2 garlic cloves, minced
• 1/2 cup sun dried tomatoes, chopped
• 1/2 cup fresh basil
• salt and pepper, to taste
• Parmigiano-Reggiano, to garnish
• 2 zucchini, washed

Directions
Use the Dash Rapid Peeler to
create strips of zucchini until
the seeds are reached.
In a large pan, heat the olive oil
over medium-high heat. Add the
garlic and sun dried tomatoes
and cook until fragrant. Toss in
the zucchini so that it is coated
in olive oil. Cook for 1-2 minutes.
Be careful not to overcook the
zucchini or it will wilt and become
watery.
Remove from heat, toss in fresh
basil, and salt and pepper to taste.
Garnish with freshly grated
Parmigiano-Reggiano.
