This document outlines the installation, operation, and maintenance of a commercial hood-type dishwasher, specifically the WT65H model, designed for washing dishes with hot water and specific detergents.

Function Description:

The dishwasher is designed for commercial use, offering various wash cycles to clean and sanitize a variety of wares. It operates with hot water and detergent for washing, followed by a hot water and rinse-aid rinse cycle. The appliance features an automatic filling and heating stage, displaying "FILL" during this process and then the tank temperature when ready. It offers four distinct wash cycles: Cycle I for lightly soiled dishes, Cycle II (recommended) for normally dirty dishes, Cycle III for very dirty dishes, and Cycle IV for continuous washing of particularly dirty dishes or for specific user needs. The unit incorporates peristaltic pumps for both detergent and rinse-aid dispensing, with adjustable settings for the amount and activation time of each. Some models include an incorporated continuous water softener, which removes calcareous substances from the feed water using special resins that are periodically regenerated. The dishwasher is equipped with safety devices, including a resettable thermal protective device for the electric pump, a back-flow device to prevent water from returning into the mains, and an overflow pipe to maintain a constant water level in the tank. Usage Features:

The dishwasher is activated by pressing the on/off button "A" after ensuring the water supply valve is open and the unit is connected to the main circuit breaker. The hood should be raised to check component positioning, then closed before starting. During the initial filling and heating, "FILL" scrolls on the display, followed by the tank temperature. The boiler temperature can be viewed by opening the hood and pressing the "J" button. The appliance offers four wash cycles:

  • Cycle I: For lightly soiled dishes (60 seconds).
  • Cycle II (recommended): For normally dirty dishes (70 seconds).
  • Cycle III: For very dirty dishes (120 seconds).
  • Cycle IV: Continuous wash for particularly dirty dishes, until manually stopped. To start a cycle, the hood is closed, and the corresponding cycle button (J, H, F, or G) is pressed. The cycle can be stopped by pressing the selected cycle button again or opening the hood, and resumed by pressing the button or closing the hood. At the end of a wash, "END" blinks on the display, accompanied by beeps. The appliance features adjustable detergent and rinse-aid dispensing settings, accessed by pressing specific buttons simultaneously with the hood open and no cycle selected. These settings allow for increasing or decreasing the initial amount and activation time of both detergent and rinse-aid. Manual activation of dispensers is possible by simultaneously pressing designated buttons to fill hoses and eliminate air. The dishwasher is designed to save up to 30% in time over traditional models. It will not perform a rinse cycle without water supply, displaying an "A1" error message. For models with an incorporated continuous water softener, the salt container must be filled with approximately 1.5 kg of coarse salt when the message "SAL" is displayed. The softener works continuously, regenerating resins periodically based on water hardness and cycle count, without requiring machine stops.

Maintenance Features:

  • Daily Cleaning: After use, lift the hood, remove racks, and remove the tank filter "C" and overflow "W" to drain the water. Close the hood and select the drain cycle by pressing the "B" button. The display will show "CLE" (CLEAN). After drainage, replace the filter and overflow, then switch off the unit and close the water shutoff valve.
  • Nozzle Jet Cleaning: Remove the top and bottom jets by unscrewing the ring nut. Unscrew plugs from rinse jets and clean with water spray. Avoid sharp implements to prevent damage.
  • Filter Cleaning: Remove filter "E" and clean any food residue.
  • Exterior Surfaces: Clean stainless steel surfaces with warm soapy water. Avoid abrasive substances, steel scrapers, common wire wool, or brushes. Clean the control panel with a soft damp cloth and neutral detergent. Do not use direct or high-pressure water jets.
  • Deliming: Deliming should be performed regularly, depending on the mineral content of the water, when lime deposits are visible. The process involves draining dirty water, filling the tank and heating water, adding a deliming agent (following supplier instructions for 11 gallons/42 liters of water), and then running Cycle III for 2 minutes. The display will show "CLE" during drainage and "END" at the end. It is crucial to observe chemical producers' instructions for handling chemicals. The deliming agent should not remain in the machine longer than recommended. For boiler deliming, an authorized service company should be contacted.
  • Prolonged Inactivity: If the dishwasher will not be used for a long time, close the water supply shutoff valve, completely drain the tank, remove and clean filters, and completely drain dispenser hoses (repeating manual activation procedure at least 3 times). Spread a thin film of petroleum jelly over stainless steel surfaces.
  • Preventive Maintenance Message: The message "CALL" may appear after a set number of cycles (e.g., 20000), indicating that a qualified authorized service technician should perform a general check-up.
  • Detergent/Rinse-Aid Type Change: If changing detergent or rinse-aid types, thoroughly rinse suction and pressure hoses with fresh water before connecting the new container to prevent crystallization and potential damage to the dosing pump.
  • Peristaltic Dispensers: The internal hose of the rinse-aid dispenser requires periodic maintenance (once or twice a year).
