All models comply with European Directives including Machinery Directive 2006/42/EC, Low Voltage Directive 2006/95/EC, and EMC Directive 2004/108/EC. Noise emission does not exceed 70 dB (A).

Usage Features

The ovens offer various control options, including mechanical, analog, and digital control panels, depending on the model.

General Operation:

  • Startup: The oven starts when the timer (knob A on mechanical/analog, ON/OFF key on digital) is activated. The cooking cabinet light turns on.
  • Cooking Time: Set using the timer knob (A) or +/- keys on digital models. An "infinite cooking" mode (INF) is available.
  • Cooking Temperature: Set using the thermostat knob (B) or +/- keys on digital models, adjustable from 0°C to 270°C. Default is 100°C.
  • Preheating: Activated by turning the timer knob (A) below 0.00 (mechanical/analog) or keeping the time key pressed (digital). The display shows "PRE". The oven signals readiness with an acoustic signal once the set temperature is reached.
  • Humidification: Regulated by knob C (mechanical/analog) or +/- keys (digital). Allows increasing humidity in the cooking chamber at regular intervals or manually.
  • Drying (Chimney Control): Models with knob D (mechanical) or digital controls allow opening the chimney valve to exhaust excess steam ("OPEN") or keeping it inside ("CLOSED"). The percentage of chimney opening can be set on digital models.
  • Core Probe (Analog/Digital): Allows setting a target internal temperature for food (0°C to 99°C). The oven operates until this temperature is reached, then behaves like the timer reaching zero.
  • Multi-Speed Fan (Analog/Digital): Allows selecting different fan speeds (e.g., 2100/1800 rpm for max 220°C, 2800 rpm for max 270°C). Speed can only be changed when the oven is ON or on STOP, not during cooking.
  • Programs (Digital): Users can set up to 20 programs, each with up to 6 stages, allowing for complex cooking cycles. Parameters can be modified during a program cycle.
  • Safety Devices: Includes a cabinet safety thermostat (cuts power on overheating) and a door switch (interrupts operation when the door is open). A fuse protects the electronic board.

Control Panel Types:

  • Mechanical Control Panel (523 M, 5-4-7-6-12-10 M): Features physical knobs for General switch, Time, Temperature, and Humidification. Models 5-4-7-6-12-10 M also include a Humidification/drying knob.
  • Analog Control Panel (523 A, 5-7-12 A, 4-6-10 A): Features digital displays for Temperature, Time, Humidification, and Core Probe, controlled by corresponding knobs. Includes START/STOP key and General switch. Multi-speed key is available on some models.
  • Digital Control Panel (523D, 5-7-12 D, 4-6-10 D): Features digital displays for Temperature, Time/Core Probe, Humidification, and Programs/Stages. Controlled by dedicated keys (+/-, Temperature, Time, Humidification/Drying, Programs, Stages, Core Probe, Multi-speed, START/STOP, General switch).

Alarms (Digital Models):

  • "Pr1": Chamber probe open or in short-circuit.
  • "Pr2": Core probe open, short-circuit, or missing.
  • "Pr5": Display card and power card communication error.
  • "Pr" on temperature display, "ERR" on time display.

Maintenance Features

The manual stresses the importance of regular cleaning and maintenance for optimal operation, hygiene, and efficiency. All extraordinary maintenance and repairs must be performed by authorized technicians.

Daily Cleaning and Maintenance:

  • After Use: Turn off the oven, water supply faucets, and disconnect the general power switch.
  • General Cleaning: Disconnect power and cold water faucet, let the oven cool. Clean stainless steel parts with lukewarm water and soap/detergents, rinse, and dry thoroughly. Avoid chlorine-based detergents, steel wool, brushes, or scrapers that can cause oxidation. Do not leave acidic foods on stainless steel parts.
  • External Cleaning: Do not wash with direct water bursts; use a wet cloth and dry surfaces.
  • Cooking Chamber Cleaning (50-60°C): Remove tray racks (being careful of light bulbs) and fan blade. Close the door, apply detergent, wait 15-20 minutes, then rinse with clean water. Start a cooking cycle at 150°C to dry the chamber.
  • Fan and Heating System Cleaning: Remove tray racks and fan blade, then follow the cooking chamber cleaning procedure. Rinse with clean water and reassemble.

Component Replacement and Adjustment (by authorized technicians only):

  • Safety Thermostat: Located behind the tray rack on the right side of the cooking cabinet. Requires opening the oven side, unscrewing the bulb, pulling out wires, and unscrewing the fixing device. Reassemble in reverse.
  • Oven Lamp: Open the oven door, turn plastic locks blocking the internal glass, replace the bulb, and reassemble.
  • Door Gasket: Pressed in; extract by pulling and insert by pressing. Perform manually to avoid damage.
  • Motor Fan: Remove motor protection from inside the oven, unscrew the fan, and pull it out after removing the left side panel. Do not bend the fan during removal or reassembly.
  • Handle and Hook: Unscrew screws (A - fig. 11), replace, and reassemble. Adjust hook closing by turning screw B (fig. 11).
  • Cooking Chamber Resistors: Operate from the right side of the oven. Disconnect electrical connections, remove grill racks and fan blade to access resistors. Unscrew fixing screws, replace resistors, and reassemble, restoring silicone where present (use 300°C resistant silicone).

Important Safety Notes:

  • Read the manual carefully before installation and use.
  • Ensure proper ventilation and maintain minimum distances from walls/ceiling (500mm from left side, 30cm from ceiling if flammable/uninsulated).
  • Remove protective film before starting.
  • Oven must be stable and level. Not suitable for built-in installation.
  • Electrical connection must comply with regulations, including an efficient grounding system and an omnipolar switch with appropriate protection devices.
  • Water supply requires a G 3/4" connection, mechanical filter, and shut-off valve. Water hardness should not exceed 3°F; a decalcifier may be needed. Water pressure: 200-300kPa.
  • Do not wash the cooking chamber or door glasses with cold water if temperature is above 70°C.
  • Only use original spare parts.
  • Avoid installing near other heat sources.
  • Do not obstruct exhaust openings.
