Roastingtemperatures,which
shouldbe lowand steady?keep
spatteringtoa minimum.When
roasting9it’snotnecessaryto
sear,baste9coveroraddwaterto
yourmeat.Tendermeatorpultry
canberoasteduncovered.
Checktheweightofther-neatand
placeit, fatsideup,ontherackin
thebroilerpanthatcamewithyour
range.Thishelpsthemeattobaste
itself.
Alwaysusea roastingpanthat
fitsthe sizeofyourmeat.A roast
placedina pantoosmallfor itssize
willdripovertheedge.
Mostmeatscontinuetocook
slightlywhilestandingin the
ovenor after beingremovedfrom
it. Takethisintoconsideration
whendeterminingyourcooking
time.
Tocook
frozen meatroasts
withoutthawing,allowmore
cookingtime.Forlargeroasts,add
10to25minutesperpound.For
roastsunder5 pounds,add 10
minutesperpound.
