General Safety and Installation:
- All units must be installed by an authorized service person in accordance with AS/NZS 60335.1 and local standards.
- The appliance is not designed for household use and must be used exclusively in commercial markets.
- It must be installed under an extraction canopy meeting AS 1668.2-2012.

Boiling Top Operation:

- Procedure: Place a pot/pan on the boiling plate, turn the dial to the desired setting (green indicator light illuminates). For maximum heat, turn to position '6' for 5-10 minutes, then adjust to the required setting. To turn off, return both dials to the OFF position.
Electric Oven Operation (for Range models):
- Controls: Element Dial and Thermostat Dial.
- Element Dial Settings: Element OFF, Upper Element, Lower Element, Upper and Lower Element. Green Indicator Light.
- Thermostat Dial Settings: Oven OFF, Temperature Range 50°C - 300°C. Red Indicator Light for heating indication.
- Procedure: For first-time use, run the empty oven on maximum for approximately 60 minutes, then cool and clean. Select the desired element setting using the element dial (green indicator light illuminates). Adjust the thermostat dial to the required temperature (red indicator light illuminates during heating and turns off when the set temperature is reached). To turn off, return both dials to the OFF position.
- Safety Note: Use heat-resistant gloves when removing items from the oven.
Maintenance Features:
Cleaning Schedule (Daily):
- Isolate the unit from the power supply.
- Clean with warm (not hot) soapy water and a sponge.
- Scrub baked-on soil with a non-abrasive cleaning pad in the direction of the grained polish.
- Thoroughly wipe stainless steel and metal parts dry with a sanitised cloth. Do not allow water to pool.
- DO NOT USE: Wire brushes, steel wool/sponges, scrapers, other abrasive materials, industrial chemical cleaners, flammable cleaners, caustic-based cleaners, or bleaches.
- Wait for the appliance to cool below 50°C before cleaning.
- The unit is NOT waterproof; DO NOT hose, pour water directly onto, or immerse the unit in water.
Corrosion Protection:
- Stainless steel is corrosion-resistant but requires proper maintenance.
- Clean any signs of mild rust/corrosion immediately with warm soapy water and dry thoroughly.
- Never use abrasive pads or cleaners.
- Check all metal surfaces for damage, scuffs, or scrapes, as these can lead to rust.
- Mild rust can be treated with commercial cleaning agents containing citric/oxalic/nitric/phosphoric acid, but DO NOT use cleaners with chlorides or harsh chemicals.
- After treatment, wash with warm soapy water and dry thoroughly.
- Ensure all liquids and moisture are cleaned up immediately, especially from crevices and folds.
- Do not leave food liquids (juices) or items like cutting boards, rubber mats, and bottles on stainless steel surfaces.
Surface Finish:
- Dry polished stainless steel surfaces with a clean, dry, soft cloth. A light oil can be applied in the direction of the grained polish to enhance the finish.
- Some commercial stainless steel cleaners may leave residue or film, making surfaces not food safe.
Periodic Maintenance:
- All controls and mechanical parts must be checked and adjusted periodically by a qualified service person (Stoddart service department).
- Inspection of unit: Every 6 months, check for damage, loose/missing components, and cleanliness.
- Control Dials: Every 12 months, check mechanical parts for damage, looseness, or missing components.
