Overview

The Gourmia Immersion Sous Vide Pod, model #GSV 130, is a kitchen appliance designed for sous vide cooking, a method that uses a heated water bath to cook food to precise temperatures over extended periods. This technique aims to produce tender, moist, and flavorful results for meats, crisp-tender vegetables that retain nutrients, and warm fruit with enhanced sweetness.

Function Description:

The Immersion Sous Vide Pod serves as the housing for the heating element, circulator, and LCD Control Panel. It allows users to cook food in a heat-safe container of their choosing, creating a water bath that maintains a consistent temperature. The device heats water to a user-defined temperature and circulates it to ensure even cooking, preventing hot or cold spots. Food is typically sealed in BPA-free bags and immersed in this temperature-controlled water bath.

Important Technical Specifications:

  • Temperature Range: The Sous Vide Heating Element is designed to reach temperatures up to 203°F (95°C).
  • Control Panel: Features an LCD display showing set temperature, actual temperature, set time, and work time.
  • Power Button: Easy On/Off functionality. Press for four seconds to turn ON, five seconds to turn OFF.
  • SET Button: Used to display and adjust variable times and temperatures.
  • Variable Time & Temp Wheel: Adjusts both time and temperature in increments on the Control Panel.
  • Water Level Indicators: Minimum and Maximum fill lines are present on the Pod to ensure proper operation. An alarm sounds and the circulator shuts off if the water level falls below the minimum.
  • Cord Set: Equipped with a 3-conductor cord set with a 3-prong grounding-type plug for safety.

Usage Features:

  1. Setup: The Pod clips to the side of a heat-proof container, ensuring it doesn't touch the bottom. The container is then filled with water between the minimum and maximum fill lines. It's important to note that adding food bags will increase the water level, so users should check the level after adding food.
  2. Power On: Plug in the device and press the Power Button for four seconds to turn on the display.
  3. Temperature Unit Selection: Users can set the temperature unit to Celsius (°C) or Fahrenheit (°F) by pressing the Power Button and SET Button simultaneously.
  4. Temperature Setting: Rotate the Variable Time & Temp Wheel to set the desired cooking temperature, up to a maximum of 95°C or 203°F.
  5. Time Setting: Press the SET Button once to flash the Hour display, then rotate the Variable Time & Temp Wheel to set the desired hour. Press the SET Button twice to flash the Minute display, then rotate the wheel to set the minutes. Cooking times can extend from 00:00 to 59:59 hours.
  6. Cooking Process: Press the Power Button once to start cooking. An alarm will beep every three seconds when the water reaches the SET Temperature, indicating it's time to add the filled food bags. Press the SET Button for two seconds to cancel the alarm.
  7. Timer Display: The TIMER will display the countdown after one minute.
  8. Cooking Completion: When the TIMER counts down to the SET TIME, an alarm will beep every three seconds, signaling that cooking time has elapsed. Press the SET button for two seconds to stop the alarm.
  9. Shutdown: Press the Power Button for five seconds to turn OFF the device.
  10. Food Removal: Use tongs to remove cooked food bags, as the water will be hot. Unplug and allow the Sous Vide Pod to cool before cleaning.

Food Preparation & Cooking Guide:

The manual provides a cooking chart with recommended temperatures and times for various foods, including beef (filet or steak, tri-tip roast, prime rib roast), pork (boneless or chop), poultry (chicken breast, chicken dark meat), fish (filet or steak), eggs (poached), and vegetables (green vegetables, root vegetables). It also includes "Chef's Finish" suggestions for searing or adding flavor after sous vide cooking.

Hints & Tips for Sous Vide Cooking:

  • Thickness Matters: The thickness of meat, poultry, and fish determines cooking time. An instant-read thermometer is recommended for checking food safety.
  • Food Safety: Add 30 minutes to cook time for eggs and poultry if unsure of doneness to ensure pasteurization.
  • Searing: Searing after cooking creates a crispy texture and appealing visual. For meat, toss butter into a smoking-hot skillet and sear for 30 seconds per side for a caramel color.
  • Tough Cuts: Tough cuts of beef and pork can be cooked sous vide for 4 to 24 hours for tender perfection.
  • Vegetables: Thinly sliced or small pieces cook faster. Whole vegetables take longer.
  • Fruit: Can be cooked sous vide at 160°F for 2-2.5 hours for toppings, purees, or syrups.
  • Bagging Food: Seasonings or rubs should be added before bagging. Use a vacuum sealer or the "Water Displacement Method" to remove air from the bag.
  • Albumin Prevention: To avoid albumin surfacing in chicken and fish, brine them for one hour in lightly salted water, then drain and pat dry.
  • Bag Type: Always use BPA-free vacuum-sealed bags for cooking foods longer than 8 hours. For shorter cooks (fewer than 8 hours), a vacuum-sealed bag or the Water Displacement Method can be used.

Water Displacement Method:

  1. Fill a large plastic container with cool water.
  2. Place prepped food in a BPA-free plastic freezer bag (do not seal).
  3. Slowly immerse the bag into the water to force air out.
  4. Continue immersing until just before water reaches the top of the bag.
  5. While still immersed, close or zip the bag, forcing out as much remaining air as possible.

Maintenance Features:

  • Before First Use: Remove all packaging and plastic bags. Wipe the Pod with a slightly damp cloth and dry well.
  • Regular Cleaning: When cool, clean the Sous Vide Pod with a slightly damp soft cloth and dry well.
  • Storage: Store the Pod in a dry place; do not wrap or secure in plastic.
  • Descaling: After several uses, descaling may be required, especially with hard water.
    • Place the Pod in a heat-safe container and attach with the clip.
    • Fill the container with water to the Maximum Fill Level line on the Pod.
    • Set the Temperature to 158°F.
    • Add one ounce of food-grade citric acid descaling powder.
    • Allow water to circulate for 20 minutes after the temperature has been reached.
    • Press the Power Button OFF and unplug.
    • When cool, rinse the bottom of the Pod in clear water and wipe dry with a soft cloth.

Error Codes:

  • EO2: Indicates an inoperable digital thermometer. Contact customer service.
  • E05: Indicates too little water. Turn the Power Button OFF, add water, restart the Pod, and continue cooking. If the water level drops below the Minimum Water Level line, an alarm will beep, and the power will turn OFF. Refill water above the Minimum Water Level Line and restart the Pod.

The Gourmia Immersion Sous Vide Pod is designed to make gourmet cooking accessible, providing a reliable tool for achieving perfectly cooked meals with minimal effort.
