Overview

This document is a user manual for the KitchenAid 6.9 L Bowl-Lift Stand Mixer, models 5KSM7580 and 5KSM7591. It provides comprehensive instructions for safe operation, assembly, use, maintenance, and warranty information.

The KitchenAid 6.9 L Bowl-Lift Stand Mixer is a powerful and efficient kitchen appliance designed for household use. Its primary function is to mix, knead, and whip various food ingredients with ease and precision. The mixer features a bowl-lift design, which allows the bowl to be securely raised into mixing position and lowered for easy access to ingredients and attachments.

Important Technical Specifications:

  • Voltage: 220-240 A.C.
  • Hertz: 50/60 Hz
  • Power Rating: 500 Watts (for models 5KSM7580 and 5KSM7591). The wattage rating is determined by the attachment that draws the greatest load (power); other recommended attachments may draw significantly less power.
  • Motor: Direct Current (DC) motor, known for quiet and efficient operation.
  • Horsepower (Peak Output): Up to 1.3 HP, enabling fast and outstanding mixing results even with heavy dough.
  • Bowl Capacity: 6.9 L (7 qt) Stainless Steel Bowl.

Usage Features:

The stand mixer is equipped with a 10-speed control guide, allowing for precise adjustment of mixing intensity. All speeds feature a "Soft Start" function, which automatically begins the mixer at a lower speed to prevent splashing and "flour puff" at startup, then quickly increases to the selected speed for optimal performance.

Speed Control Guide:

  • Speed 1 (Stirring): For slow stirring, combining, mashing, and starting all mixing procedures. Use to add flour and dry ingredients to batter, and add liquids to dry ingredients. Not recommended for mixing or kneading yeast doughs.
  • Speed 2 (Slow Mixing, Kneading): For slow mixing, mashing, faster stirring. Ideal for mixing and kneading yeast doughs, heavy batters, and candies; starting mashing potatoes or other vegetables; cutting shortening into flour; and mixing thin or splashy batters.
  • Speed 4 (Mixing, Beating): For mixing semi-heavy batters, such as cookies. Use to combine sugar and shortening and to add sugar to egg whites for meringues. Medium speed for cake mixes.
  • Speed 6 (Beating, Creaming): For medium-fast beating (creaming) or whipping. Use to finish mixing cake, doughnut, and other batters. High speed for cake mixes.
  • Speeds 8-10 (Fast Beating, Whipping, Fast Whipping): For whipping cream, egg whites, and boiled frostings. Also suitable for whipping small amounts of cream, egg whites, or for final whipping of mashed potatoes.

Capacity Chart (for 6.9 L Bowl):

  • Flour: 2 to 2.2 kg
  • Bread: 8 breads of 450 g
  • Cookies / Biscuits: 160 pieces
  • Mashed Potatoes: 3.6 kg

Attachments:

The mixer comes with several standard attachments:

  • Flat Beater: For normal to heavy mixtures such as cakes, cookies, creamed frostings, quick breads, and mashed potatoes.
  • Stainless Steel Whip (11-wire elliptical): For mixtures requiring air incorporation, such as egg whites, cream, and boiled frostings.
  • Spiral Dough Hook: For mixing and kneading yeast doughs. The PowerKnead Spiral Dough Hook efficiently kneads most yeast dough within 4 minutes (use Speed 2 for yeast doughs).

The mixer also features an "Attachment Hub" for optional accessories, designed with a square drive shaft and tapered housing for a snug fit and efficient power transmission.

Assembly and Adjustment:

  • Attaching the Stainless Steel Bowl: Place bowl supports over locating pins and press down on the back of the bowl until the bowl pin snaps into the spring latch. The bowl must be securely snapped into place to prevent instability during use.
  • Raising/Lowering the Bowl: Rotate the bowl lift lever counterclockwise to the straight-up position for mixing, and downward to remove the bowl.
  • Attaching/Removing Beaters: Lower the bowl, slip the beater onto the beater shaft, press upward, and turn to the right to hook it over the pin. To remove, press upward and turn to the left.
  • Attaching the Pouring Shield: Attach the desired beater and bowl. Slide the pouring shield over the bowl from the front until centered, with the bottom rim fitting inside the bowl. For best results, rotate the shield so the motor head covers the U-shaped gap, and pour ingredients through the pouring chute.
  • Adjusting Beater to Bowl Clearance: The mixer is factory-adjusted for the flat beater to just clear the bottom of the bowl. If adjustment is needed, turn the speed control to "0" (OFF), unplug the mixer, lower the bowl, and turn the "Beater Height Adjustment Screw" (A) slightly counter-clockwise to raise the beater or clockwise to lower it. Adjust until the beater just clears the bowl surface. Over-adjusting may prevent the bowl lift lever from locking.

Tips for Great Results:

  • Planetary Mixing Action: The flat beater moves around the stationary bowl while turning on its own axis, ensuring thorough coverage. KitchenAid mixers mix faster and more thoroughly, so mixing times in recipes may need adjustment to avoid overbeating.
  • Adding Ingredients: Always add ingredients close to the side of the bowl, not directly into the moving beater. Use Speed 1 until ingredients are blended, then gradually increase speed.
  • Adding Nuts, Raisins, or Candied Fruits: Fold solid materials in during the last few seconds of mixing on Speed 1. Batter should be thick enough to prevent sinking. Sticky fruits should be dusted with flour for better distribution.
  • Liquid Mixtures: Mix large amounts of liquid ingredients at lower speeds to avoid splashing, increasing speed only after the mixture thickens.
  • Whipping Egg Whites: Use room temperature egg whites in a clean, dry bowl. Gradually increase speed to 8 or 10 depending on quantity, watching for frothy, soft peak, almost stiff, stiff but not dry, or stiff and dry stages.
  • Whipping Whipped Cream: Use cold whipping cream in a chilled bowl. Gradually increase speed to 8 or 10 depending on quantity, watching for thickening, holding shape, or stiff stages.
  • Bread Making Tips: Always use the PowerKnead Spiral Dough Hook on Speed 2 for yeast doughs. Warm all ingredients to room temperature for proper rising. Allow dough to rise in a warm, draft-free place (26°C to 29°C). Add flour gradually until the dough cleans the sides of the bowl. Baked bread should be deep golden brown and sound hollow when tapped.

Maintenance Features:

  • Cleaning: The stainless steel bowl, flat beater, stainless steel whip, and spiral dough hook are dishwasher-safe. Alternatively, they can be cleaned in hot, soapy water and rinsed thoroughly. The mixer base should be wiped with a damp cloth and should never be immersed in water. The beater shaft should be wiped frequently to remove any residue.
  • Safety: Always unplug the mixer before cleaning or handling attachments to avoid electrical shock or injury from moving parts.

Service and Warranty:

The manual provides detailed warranty information for household use, including coverage for defects in materials or workmanship, and exclusions for improper use or damage. It also lists authorized service centers and customer service contact information for Europe, Australia, New Zealand, the UK, Ireland, Germany, Switzerland, France, Belgium, Luxembourg, Italy, the Netherlands, Greece, Sweden, Norway, Finland, Denmark, Iceland, Russia, Poland, Slovakia, Romania, and Bulgaria.
