The Landmann Rocket Roaster is an outdoor cooking appliance designed for roasting various foods such as poultry, beef, pork, lamb, and seafood. Its unique design allows for efficient and flavorful cooking, utilizing charcoal as its heat source. The roaster is intended for adult use only and must be placed on a level, non-combustible surface like brick, concrete, stone, or other masonry. It should never be used under covered porches, awnings, trees with low branches, or on lawns or wooden decks. A minimum clearance of 10 feet from buildings, flammable items, or vehicles is required for safe operation.

The Rocket Roaster's primary function is to provide a contained environment for roasting, which helps to retain moisture and infuse flavors into the food. It consists of several key components: a Roasting Chamber, a Bottom Charcoal Pan, a Top Charcoal Pan, a Roasting Basket, an Aluminum Drip Pan, a Poultry Trivet, Legs, Skewers, Flavor Infusers, and a Lifting Handle. The Roasting Chamber is where the food is cooked, while the charcoal pans hold the charcoal that generates the heat. The Roasting Basket is designed to hold various food items, including roasts and vegetables, and can be used with skewers for suspending meat. The Poultry Trivet is specifically for larger poultry items like whole turkeys. The Aluminum Drip Pan collects natural drippings, which can be used for gravies and sauces. Flavor Infusers, located inside the Roasting Chamber, allow users to add herbs, wood pellets, or wood chips to impart smoky flavors and keep food moist.

Assembly of the Rocket Roaster involves attaching the legs to the Bottom Charcoal Pan, securing the Flavor Infusers inside the Roasting Chamber, placing the Roasting Chamber onto the Bottom Charcoal Pan, and then positioning the Aluminum Drip Pan and Top Charcoal Pan. It's crucial to ensure a tight fit between the Roasting Chamber and the Bottom Charcoal Pan to prevent starter fluid fumes from escaping. Before the first use, it is recommended to break in the roaster with one cook cycle without food to eliminate any metallic flavor. All cookware should be washed with warm soapy water and rinsed before initial use to remove protective coatings.

Operating the Rocket Roaster involves charcoal lighting and careful placement of food. Users should use fresh, dry standard charcoal with a minimum amount of odorless starting fluid. Instant light charcoal is not recommended, and excessive use of starter fluid can lead to flavor contamination. Cooking time begins once the food is in the roaster and the charcoal has started to ash on the corners. The roaster should not be opened before the estimated cooking time is up. Throughout and after the cooking process, the roaster will be very hot, and hot pads or oven mitts must be used when handling components.

Flavor infusion is a key feature of the Rocket Roaster. Herbs, wood pellets, or wood chips can be placed in the Flavor Infusers to smoke foods and enhance moisture. For the first use, it's suggested to fill the infusers only half full and adjust the amount based on personal taste. The use of hole plugs in the vent holes can increase steam, which inhibits the burning of herbs or wood pellets and reduces browning, adding moisture.

The drip pan system is designed to collect natural drippings without burning them, making them easily recoverable for homemade gravies and sauces. After cooking, the cooked food can be removed, and a bulb-style baster or long-handled ladle can be used to retrieve the drippings from the Roasting Chamber.

When cooking, it's important not to overload the roaster; a maximum of 14 lbs. of food is recommended. When using the Roasting Basket, meat should be placed above vegetables, and food items should not extend above the top of the basket. Placing a small sheet of aluminum foil on top of ingredients that are very close to the Top Charcoal Pan can help them brown more evenly.

For whole turkeys, a recommended size is 10-14 lbs., and the Poultry Trivet is advised. Wings should be removed or secured to prevent contact with the Roasting Chamber. The turkey should be prepared by removing the neck, organ package, and excess fat, then rinsed, patted dry, injected with marinade, and seasoned. It is then placed on the Trivet with legs pointing up, inserted into the roaster, and the Top Charcoal Pan is secured.

For beef, pork, and lamb roasts, recommended sizes are 4-8 lbs., potentially including vegetables to reach up to 14 lbs. Large cuts of fatty meat are not recommended to prevent drippings from overflowing the drip pan. The Roasting Basket is ideal for these items and for adding vegetables. Roasts are prepared by rinsing, patting dry, injecting with marinade, and seasoning. They are then suspended in the center of the Roasting Basket using skewers, ensuring they are below the top of the basket. If vegetables are included, they are placed in the basket first, with the roast slightly above them. The filled Roasting Basket is carefully placed into the roaster, ensuring the drip pan is underneath, and the Top Charcoal Pan is secured.

For other poultry, such as single chickens, double chickens, and roasting hens, the Poultry Trivet can be used, or the Roasting Basket for turkey breasts. Cooking times will vary based on outdoor weather conditions, the starting temperature of the food (thawed food cooks faster), and the type of charcoal used. An internal thermometer should always be used to check for proper doneness.

Maintenance involves ensuring the roaster is in good working condition before each use. After the fire has been extinguished, surfaces will remain hot for some time, so caution is necessary. All coals must be cold before emptying, and water should be poured on coals if necessary before disposing of ashes.

Food safety is emphasized, including keeping raw poultry and meat separate from ready-to-eat food, using clean platters and utensils for cooked foods, thoroughly cooking poultry and meats to kill bacteria, using an instant-read thermometer for proper internal food temperatures, refrigerating prepared food and leftovers, and washing hands, utensils, and surfaces with soap and hot water before and after handling raw poultry and meats.
