Lemon Lime Cordial
Makes : approximately 1.5 litres of
undiluted cordial
Ingredients:
10 large lemons
6 limes
1000 g sugar
500 ml water
10 ml citric acid
Method:
Squeeze juice from lemons and
limes. Place in a 3 to 4-litre dish with
the remaining ingredients. Cook on
1000 W for 8 to 10 minutes. Stir 2
to 3 times during this cooking time
to dissolve sugar. Cook for a further
25 to 30 minutes, or until the mixture
has become a syrupy consistency.
Set aside to cool. Pour into bottles
and seal. Store in the refrigerator
and serve with cold water, soda or
mineral water and fresh mint leaves
if desired.
Date and Walnut Fudge
Makes : 25 pieces
Ingredients:
250 g sweet biscuits, crushed
50 g walnuts, chopped
100 g dates, chopped
10 g cocoa powder
10 g coffee powder
175 g dark chocolate, broken
into pieces
410 ml can sweetened
condensed milk
5 ml vanilla essence
Method:
Line the base of a 20 cm square
dish with baking paper. Mix biscuit
crumbs, walnuts and dates in a bowl.
Place remaining ingredients in a
separate bowl and cook on 800 W for
2 to 3 minutes. Stir well. Pour melted
mixture over date mixture and mix
well. Press mixture into prepared
dish. Smooth top and chill until set.
Cut into squares.
Tip: An icing of your choice can be
spread over this slice.
Choc Caramel Squares
Makes : 12 squares
Ingredients:
125 g butter
85 g sugar
1 large egg
250 g flour
15 g cocoa
5 g baking powder
Topping:
125 ml condensed milk
30 ml golden syrup
60 g butter
Method:
Place butter in a bowl and cook on
1000 W for 15 to 20 seconds. Add
sugar and mix well. Add egg to butter
mixture and mix well. Sift remaining
ingredients and fold into butter-egg
mixture. Mix well. Place in a lined
20 cm square dish and cook on
800 W for 7 to 9 minutes. Place all
topping ingredients in a 1-litre jug
and cook on 1000 W for 2 to 2 ½
minutes. Spread topping over base
and chill. Cut in squares when cold.
Chocolate Brownies
Serves : 9
Ingredients:
125 g butter
200 g dark chocolate (72 % cocoa
solids)
175 g soft brown muscovado
sugar
2 eggs, beaten
a few drops vanilla essence
50 g plain flour
5 ml baking powder
Method:
Melt the butter with 50
g
of the
chocolate in a small bowl on 600 W
for 2 minutes. Put the eggs, sugar and
vanilla essence in a bowl, then sift in
the flour and baking powder. Stir in the
melted chocolate and butter mixture
and mix well. Chop the remaining
chocolate into rough chunks and stir
into the brownie mixture. Spoon into
the dish, spread evenly and cook on
metal tray on COMBINATION 3 for
8-11 minutes or until firm.
