Function Description:
The Patriot Electric Griddles are commercial cooking appliances designed to heat a flat cooking surface to specified temperatures for various food preparation tasks. Each griddle features multiple heating elements controlled by individual thermostats, allowing for precise temperature management across different sections of the cooking surface. The griddles are intended for use with alternating current (AC) only and require proper electrical installation according to national and local codes.

The 24", 36", and 48" models can be wired for either 1-phase or 3-phase operation in the field by making line connections at the junction box located at the rear of the unit.

Installation Requirements:
- Must be installed by a qualified electrical installer.
- Conforms to National Electric Code, local electric codes, and electric company rules.
- External wiring should be in conduit or approved flexible cable suitable for temperatures indicated on the wiring diagram.
- Supply circuit must be properly fused and equipped with a disconnecting means.
- The griddle body must be grounded (not to an electric supply line).
- Not internally fused; requires connection to a suitable disconnect box.
- Minimum clearance: 1-inch from side walls and 1-inch from rear walls.
- Leveling: Adjustable feet (1-3/4" adjustment range) for accurate leveling.
- Exhaust Canopy: A vertical distance of not less than 48" between the appliance top and filters or combustible material. Exhaust installation must conform to local codes.
- Supply connections must use copper wire only, suitable for at least 105°C (221°F), with gauge shown or larger. All internal wiring is #14 GA.
Usage Features:
- Temperature Control: Each 12" section of the griddle has its own thermostat, which also functions as an "ON/OFF" switch. Users can set the desired temperature using the dial knob, and the thermostat will automatically maintain the selected heat range.
- Heating Light: Each thermostat has a corresponding heating light that indicates when the section's control knob is active and the unit is not in the off position.
- Seasoning the Griddle Cooking Surface: Before initial use and after thorough scouring, the griddle surface must be seasoned to prevent food from sticking. This involves:
- Setting temperature controls to 350°F (177°C).
- Spreading a thin film of cooking oil over the hot surface with a clean cloth for half an hour.
- Removing excess oil and wiping clean.
- Repeating steps 2 and 3 for another half hour.
- Cooking: Set the thermostat to the desired temperature. After a short pre-heating period, the thermostat will maintain the selected temperature.
Maintenance Features:
- Cleaning Care:
- DO NOT use abrasive or flammable cleaning fluids.
- DO NOT hose down, immerse, or pressure wash any part of the griddle, excluding the catch tray.
- NEVER use a scrubber pad (on exterior surfaces except the griddle plate), steel wool, abrasive material, or cleaners containing chlorine, iodine, ammonia, or bromine chemicals, as these will deteriorate stainless steel and shorten unit life.
- Warranty: Patriot Electric Griddles come with a 1-year limited warranty against manufacturing defects from the date of purchase, provided the 'Warranty Registration Card' is completed and sent to the company. This warranty covers parts and reasonable labor rates, with travel coverage up to 50 miles (80 km) from an authorized service agency.
- Warranty Exclusions: The warranty is void if the unit is improperly installed, subjected to incorrect voltage, misused (e.g., scratching the surface), cleaned with damaging chemicals, or neglected in terms of daily maintenance. It also excludes damage during transit, customer abuse, residential use, and installation in non-permanent structures (which have a 30-day limited warranty).
- Service and Repair: For service or maintenance, contact a service representative or local service company. Always refer to the model number, serial number, and type of unit to avoid confusion.
- Warnings (Personal Safety): Indicated by "AWARNING" or a triangle with two exclamation marks.
- Warnings (Equipment/Property Damage): Indicated by "ACAUTION".
- Owners are responsible for ensuring proper and safe use, adhering to all instructions, and complying with local, state, and federal laws.
- Only individuals over 18 years old, adequately trained, and supervised, who have read and understood the manual, should operate the equipment.
- Repairs and conversions must be made solely by an authorized servicer.
- The device must be safely and adequately grounded in accordance with local codes or, in their absence, with the National Electrical Code, ANSI/NFPA 70. It requires a grounded system and a dedicated circuit, protected by a fuse or circuit breaker of proper size and rating. Canadian installation must comply with CSA C22.2. A 12AWG ground wire is suggested.
The manual emphasizes that improper installation, adjustment, alteration, service, or maintenance can cause property damage, injury, or death. It also states that the manual and warning labels do not replace the need for alertness, proper training, supervision, and common sense.
