1. PRESSURE DIAL GAUGE
Thepressuredialgaugeregisterspressureinbothpounds(outerscale)andmetricmeasure(innerscale).The
pointermovesaroundthedialindicatingthepressurewithintheunit.Beforeeachcanningseason,checkthe
pressure dial gauge for accuracy.
2. PRESSURE REGULATOR
The pressure regulator is a solid one-piece unit. Accurate pressure readings are registered on the pressure
dial gauge and can be controlled and maintained by adjusting heat settings.
3. VENT PIPE
Thepressureregulatortsovertheventpipeandallowsexcesspressuretobereleased.
4. AUTOMATIC AIR VENT
Theautomaticairvent,locatedinthecenteroftheCannercover,doesthefollowing:(1)Automatically
ventsorexhaustsairfromtheCanner;(2)Automaticallyreleasesexcesssteamincasetheventpipebecomes
cloggedandpressurecannotreleasenormally:(3)Actsasananti-vacuumvalve,preventingthelossofjuices
fromfoodafterpressureiscompletelyreduced;(4)Actsasavisualindicationofpressureinthecanner.
5. SEALING RING
ThesealingringtsintotheCannercoverandformsapressure-tightsealbetweenthecoverandbodydur-
ing canning and cooking.
6. CANNING RACK
ThecanningrackisplacedinthebottomoftheCannertoholdjarsoffthebottomoftheunitwhilecanning.
JarsmaybreakduringthecanningprocessifplacesonthebottomoftheCanner.Thecanningrackshould
always be used when canning.

How To Use Your Presto
Pressure Canner
IMPORTANT: Read carefully. Do not attempt to use your Canner before reading these instructions.
Followthesestep-by-stepinstructionsforcanning.Preparefoodaccordingtothedirectionsinspecicrecipe.
1. Therststepinpressurecanningistoassemblethecanningequipment.BesureyourCanneristhoroughlycleanedandworking
properly.Beforeeachcanningseason,checkthepressuredialgaugeforaccuracy.Alsocheckthesealingringandautomaticairvent.
Replacethesepartswhentheybecomehard,unusuallysoft,ordeformed.(See“GeneralMaintenance”,page5.)
2. Checkmasonjarsfornicks,cracks,andsharpedges.Checkbandsfordentsorrust.Useonlyjars,lids,andbandsinperfectcondition
so an airtight seal may be obtained.
Washandrinsejars,lids,andbands.Pourhotwaterintojarsandsetasideuntilneeded.Followclosuremanufacturer’sdirectionsfor
bands and lids.
3. Forrecipeinformation,seeyourbooklettitled“Recipes and Helpful Hints for Presto
Pressure Canners”.Selectfresh,rmfood.
Sortfoodaccordingtosize.Cleanfoodthoroughly.Prepareaccordingtorecipe.Fillhotmasonjarspromptlywithfoodandliquid
totherecommendedlevel.Allow½-inchheadspaceforfruits.Allvegetables,meat,poultry,andseafoodrequire1-inchheadspace
duetoexpansionduringprocessing.Workoutairbubbleswithacleanspatula.Wipesealingedgecleanwithadampcloth.
Adjustlidsandbandsaccordingtoclosuremanufacturer’sdirections.
4. PlaceCanneronalevelburner.Useonatiltedburnermayinterferewiththeoperationofthepressureregulator.Placethreequartsof
boilingwater,canningrack,andjarsinroomtemperatureCanner.Pouringwaterintoadry,overheatedCannermaycrackthemetal.
TopreventwaterstainsinCanneroronjars,add2tablespoonswhitevinegartowaterinCanner.Placejarsoncanningrack.Always
usecanningrack.JarsmaybreakifsetdirectlyonbottomofCanner.
5. LookthroughtheventpipetobecertainitisopenbeforeplacingcoveronCanner.Tocleantheventpipe,drawapipecleaneror
small brush through the opening.
