than 400°F or 200°C. Ifthe temperature
exceeds 400°F (200°C) or if oil begins to
smoke, immediately turn the burner or gas
supply OFF.
6. Heated liquids remain at scalding
temperatures long after thecooking
process. Never touch cooking appliance
until liquids
have cooled to 115°F (45 °C) or less.
