Function Description
The R 201 and R 201 Ultra serve as both a bowl cutter and a vegetable preparation attachment.
Bowl Cutter Mode:
In this mode, the appliance can process various ingredients in a minimum amount of time. It is suitable for:
- Meat: Preparing hamburgers, steak tartare, sausagemeat, terrines, and pâtés.
- Fish: Making brandade and fish terrines.
- Vegetables: Chopping garlic, parsley, onions, shallots, and preparing soups or purées.
- Fruit: Creating compotes and purées.
- Emulsifying: Producing mayonnaise, ailloli, remoulade sauce, snail butter, or salmon butter.
- Kneading: Preparing shortcrust pastry, shortbread, and pizza dough.
- Grinding: Processing dried fruit, ice, and breadcrumbs.

Safety Systems:
The R 201 / R 201 Ultra is equipped with an electromechanical safety system that stops the motor when the lid is opened. To restart, the lid must be closed.
It also features a thermal cut-out that automatically stops the motor if the machine is left on for too long or overloaded. If this occurs, the machine must be allowed to cool completely before restarting.
Usage Features
Assembly:
- Bowl Cutter Attachment:
- Ensure the bowl is straight in relation to the motor shaft, with the safety pin slightly to the left.
- Turn the bowl to the right until the motor base connectors are securely positioned. The safety pin should then be straight in front of the motor base.
- Engage the blade on the motor shaft and lower it to the bottom of the bowl, rotating it to ensure correct positioning.
- Place the lid on the bowl with the large feed-hopper facing you, then rotate to the right until it locks.
- Vegetable Slicer Attachment:
- Follow the same procedure as for the cutter attachment (points 1 and 2).
- Fit the extension piece onto the motor shaft.
- Fit the desired disc onto the extension piece.
- Place the lid on the bowl with the large feed-hopper facing you, then rotate to the right until it locks.
Operation:
- Control Panel (R 201): Red switch for "Off," Green switch for "On."
- Control Panel (R 201 Ultra): Red switch for "Off," Green switch for "On," Black switch for "Pulse."
- Safety Precautions:
- Never override the locking and safety systems.
- Never introduce any object into the container while food is being processed.
- Never push ingredients down with your hand.
- Do not overload the appliance.
- Never switch the appliance on while it is empty.
- Stop the machine before opening the lid when processing liquids to avoid splashes.

Maintenance Features
Cleaning:
- General: Always unplug the appliance before cleaning. Clean the appliance and its attachments at the end of each cycle.
- Motor Base: Never immerse the motor base in water. Clean it using a damp cloth or sponge.
- Bowl Cutter Attachment:
- After removing the lid, remove the bowl by rotating it to the left and pulling up. Leave the blade in the bowl to prevent spillage with liquids.
- If the food is solid, remove the blade and empty the bowl.
- To remove stuck mixture, replace the bowl and blade, then switch on the machine for a few minutes.
- For thorough rinsing, fill the bowl with hot water and switch on for a few minutes.
- Vegetable Preparation Attachment:
- After removing the lid (rotate to the left), pull out the disk by raising its edges.
- Remove the extension piece, then pull out the bowl by rotating clockwise.
- Clean all parts.
- Cleaning Method: Hand washing with washing-up liquid is recommended for all attachments to prolong machine life.
- Detergents: For plastic parts, avoid detergents that are too alkaline (containing caustic soda or ammonia) as they can cause rapid deterioration.
- Aluminum Parts: Use cleaning fluids suitable for aluminum alloys.

Maintenance:
- Before Maintenance: Always unplug the appliance before opening the motor housing.
- Blades:
- Smooth blades should be sharpened daily using the sharpening stone supplied with the machine.
- Blade sharpness directly impacts cut quality. Blades are wearing parts and should be replaced occasionally to maintain consistent product quality.
