Confectioner’s cream
- 1 l. milk
- 250 sugar
- 3 egg yolks
- 100 gr confectioner’s powder
Method :
1) Bring the milk with 2/3 of the sugar to a boil.
2) Meanwhile beat together the confectioner’s powder with the rest of the sugar and
the egg yolks (= de composition).
3) When the milk boils, pour a part thereof on the composition and mix well and then
boil everything back in the cooking pot and stir.
Note : to prevent that the milk and the sugar burn we’re going to add the sugar first in
the cooking pot and then pour the milk on the sugar.
Pizza
- 300grams of dough for pizzas fitting in a B30 or B40 oven
- 200grams of dough for pizzas fitting in a B5, B10 or B20
- U can use dough of bread or pistolets for the pizza dough. U can always add some
pepper and olive oil in the dough.
Method:
1) Role out the dough very thin and place it on a baking sheet with a wooden board
underneath
2) Prepare the dough: for example: tomato juice – spices – meat – vegetables – cheese
3) Place the pizza together with the baking sheet in the oven en bake at 230° for 7
minutes, with the steam vents open
4) Get the pizza out of the oven and place it on a grill (without the baking sheet) for
minimum 15 minutes so all humidity can escape
5) Place the pizza in the oven again for 3 minutes at 230°, with the steam vents open
Remark:
- U can easily prepare the pizzas in front en bake them later on in the oven
- The prebaked pizzas can easily be frozen in
