Overview

This document is an instruction manual for a meat grinder, specifically models TC 22 and TC 32. It provides comprehensive information on the device's operation, maintenance, and safety.

Function Description

The meat grinder is a simple, compact, highly efficient, and powerful machine designed and manufactured to grind meat or fish at temperatures up to a maximum of 7°C. Its components that come into contact with food are carefully chosen to ensure maximum hygiene. The machine is intended for professional use by qualified operators who have read and understood this manual. It should only be used when safely supported on a solid work table, and the size of the meat to be ground must fit completely within the inlet feed without overflowing the hopper.

The machine features:

  • Housing and loading hopper made of stainless steel AISI 304 for maximum hygiene and easy cleaning.
  • Plates and knives made of AISI 430 stainless steel, which should be dried after washing to prevent rust.
  • Feed and rotor made of cast stainless steel AISI 304, with the option of applying the UNGER system in whole or part.
  • A switch for reversing the direction of rotation.
  • Rigid locking of the feed to improve meat cutting and extend the life of plates and blades.
  • Ventilated motors (either three-phase or single-phase) offering consistent performance, durability, increased effective operating time due to fewer interruptions, and a low rate of heat to keep meat fresh.

Prohibited uses include:

  • Using the machine for chopping foods other than meat.
  • Operating the machine without all guards intact and properly installed.
  • Using or storing the machine in a cold room, which can damage electrical components and alter lubricant viscosity.

Usage Features

The machine is equipped with controls and indicators:

  • Start button (1): To start the machine.

  • Reverse button (3): To change the direction of rotation of the rotor pulses.

Before use, operators must ensure all guards and safety devices are in place and effective. The product to be ground must be cut to a size that fits the loading feed and pressed with the special pusher (pestle); hands must never be used for this.

The machine offers three different meat cutting units:

  • System -A- (Enterprise or normal): Consists of an AISI 304 stainless steel rotor, a knife, and an output plate, both in AISI 430 steel.
  • System -B- (Partial UNGER): Replaces the knife "5" and plate "4" with a spacer "7".
  • System -C- (Total UNGER): Includes an AISI 304 stainless steel rotor, an AISI 430 steel fringer plate, a first knife and related perforated plate (both AISI 430 steel), a second knife with a final perforated plate (both AISI 430 steel), and an AISI 304 stainless steel spacer.

The manual also describes the assembly and use of a manual hamburger forming accessory, which can be supplied with the meat grinder. This accessory includes a sensor to control start/stop, a sensor to detect its presence, a ring-nut mount, a plate without tang, and a short worm pin. The accessory comes with different dies for hamburgers of various shapes and weights (e.g., chicken leg, oval, meat balls, square, rectangular, round, adjustable round to oval).

Maintenance Features

All maintenance and cleaning must be performed with the machine at a standstill and disconnected from the power mains. The work area must be kept clean and dry. Unauthorized personnel are not permitted to service the machinery. Any replacement parts must be original parts from authorized shops or the manufacturer.

Cleaning:

  • Unplug the machine from the mains before cleaning.
  • Do not clean with a water jet.
  • Use only non-toxic cleaners specifically for food-contact components.
  • Plates and knives, being made of AISI 430 steel, should be dried after washing to prevent rust.
  • After each work cycle, food should not be left inside the grinding inlet or on the trays for long periods (maximum 5 minutes).

Dismantling and cleaning the mouth after use:

  1. Empty the mouth and inlet collar completely, then run the machine without meat.
  2. Switch off and disconnect the machine from electricity once no processing residues remain.
  3. Loosen the nuts fastening the mouth.
  4. Detach the mouth and dismantle its components (ring nut, plate, knives, worm).
  5. Clean every component.

Assembling the mouth after cleaning:

  1. Insert the grinding worm.
  2. Insert the knife and plate, ensuring the blade faces the grinding plate.
  3. Screw on the ring nut and tighten it slightly.
  4. Mount the machine mouth following the instructions.

Lubrication:

  • The machine does not require lubrication.

Troubleshooting: The manual includes a section on common faults, their causes, and remedies, such as:

  • Machine not starting: Check circuit breaker, plug switch, start button, and safety devices.
  • Rotator rotating in the opposite direction (three-phase models): Reverse phase wire on the plug.
  • Product not grinding correctly: Properly tighten plate and knife, replace defective parts, or tighten the ring nut.

The manual also addresses the disposal of packaging materials and the machine itself in accordance with WEEE (Waste Electrical and Electronic Equipment) directives. Packaging materials like cardboard, nylon, and wood products are comparable to municipal solid waste, with nylon requiring specific disposal due to toxic fumes if burned. The machine itself, at the end of its life, must be separated from other waste and recycled through the manufacturer's system.
