ulizinga(long)match.Controloftheame:Youcangetanysizeofamebetweenlow(“MIN”)
andhigh(“MAX”)bypushingandrotangtheknobbetweentheseposions.

Saturatethesurfaceofthecastirongridswithcookingoil.Thiswillkeepthefoodfromsckingto
thesurfaceofthegrill.Turnontheburnersandletthegridsgetwarmbeforestarngtobarbeque.
Tipp:Flamescausedbyfatdrippingfromthefoodcoulddamagetheresult,makingthefoodburn
easily.Therefore,youshouldcutawayexcessfatfromthemeatifthisbecomesaproblem.Remov-
ingthemeatfromtheamesisalsoadvisable.
Grillmethods
Therearetwomainmethodsforbarbequing:Indirectanddirectheatbarbequing.Indirectbarbe-
quingmeansulisingthegrillalmostasanoven.Thefoodisplacedovertheburnerwhichisnot
burning,withtheotherburnerturnedon-remembertoputthelidonthegrillaeryou’veput
yourmeatson.Thisissuitableforlargerpiecesofmeatbeingcookedformorethan25minutes.
Usingathermometerisrecommended,especiallyforlargerpiecesofmeat.
Directgrillingisthemoretradionalwayofgrilling;withtheheatoriginangdirectlybelowthe
food.Directbarbequingissuitableforhotdogsandslicedmeatwhereacrispsurfaceisdesired.
