This document is an Owner's Guide for a Tappan Gas Built-In Oven, providing essential information for its safe operation, maintenance, and troubleshooting.

Function Description:

The Tappan Gas Built-In Oven is designed for baking and roasting food using dry heat. It operates on either Natural Gas or Liquefied Petroleum (Propane) Gas, with the unit shipped from the factory configured for Natural Gas. The oven features a glow bar igniter system that heats up to ignite the gas burner when the oven is turned on. The igniter cycles on and off with the thermostat to maintain the desired temperature. Some models are equipped with self-cleaning capabilities, utilizing high temperatures to eliminate or reduce food soil to a fine ash. The oven is vented through either the upper control panel trim or the center trim, depending on the model, to ensure proper burner operation and good baking results.

Important Technical Specifications:

  • Power Supply: 120V—60 Hz.
  • Gas Type: Convertible between Natural Gas and Liquefied Petroleum (Propane) Gas. Conversion instructions are provided in the installation manual.
  • Oven Light: Uses a 40-watt appliance bulb.
  • Temperature Control: Electronically controlled, with a thermostat that cycles the igniter to maintain temperature.
  • Grounding: Equipped with a 3-prong grounding plug for protection against shock hazard, requiring connection to a properly grounded 3-prong wall receptacle.
  • Electronic Oven Controller (some models): Features a full-time oven circuit diagnostics system that monitors internal circuitry and crucial oven circuits. In case of system failure, it shuts down operation and displays error codes (-F1- or -F3-).

Usage Features:

  • Oven Ignition: The glow bar igniter automatically heats and ignites the gas burner. Users are instructed to turn the Temperature Control knob OFF during a power failure and back to the desired temperature when power resumes.
  • Arranging Oven Racks: Racks should always be arranged when the oven is cool. To remove, pull the rack forward until it stops, lift the front, and slide out. To replace, fit the rack onto guides, tilt the front upward, and slide back into place. Oven mitts are recommended when handling hot racks.
  • Setting Oven Controls: Instructions for setting oven controls, including the timer and electronic oven control, are referenced in the Timer Section or Electronic Oven Control Guide.
  • Adjusting Oven Temperature: Instructions for temperature adjustment are also found in the Timer Section or Electronic Oven Control Guide.
  • Baking Guidelines: For optimal baking results, pans should be centered, allowing 2-4 inches (5-10 cm) of air space around utensils to ensure proper air circulation. Staggering multiple pans is recommended.
  • Oven Vent: The oven vent should not be blocked, as this can lead to baking failures, fire, or damage.
  • Oven Door: The oven door is removable for cleaning and temporary storage. It is heavy and should be handled with care, laid flat with the inside facing down when stored.
  • Oven Bottom (some non self-clean models): The oven bottom can be removed for cleaning by lifting a tab at the back, sliding it out, and then lifting it up.

Maintenance Features:

  • General Cleaning:
    • Frequency: Regular cleaning is emphasized to prevent grease accumulation and reduce the need for major cleanings. Spillovers and heavy soiling should be removed as soon as possible.
    • Cooling: Always allow the oven to cool before cleaning.
    • Protective Gear: Wear rubber gloves for manual cleaning.
    • Cleaning Agents: Hot, soapy water is recommended for general cleaning. For heavy soil, a dish of ammonia can be left in the oven overnight, followed by cleaning with hot, soapy water, a soap-filled scouring pad, or a nonabrasive cleaner. Oven cleaners can be used on all interior surfaces of non self-clean models, following manufacturer's instructions.
    • Specific Surfaces:
      • Aluminum Trim: Use hot, soapy water and a cloth; avoid scourers, all-purpose cleaners, ammonia, powdered cleansers, or commercial oven cleaner.
      • Glass, Painted, Plastic Body Parts & Decorative Trim: Use hot, soapy water and a cloth. For difficult soils, apply liquid detergent, leave for 30-60 minutes, then rinse. Avoid abrasive cleaners, spray cleaners, or scouring pads.
      • Control Panel: Turn controls OFF, remove knobs, clean with a damp cloth (avoiding excess water around controls), then replace knobs.
      • Porcelain Enamel (Broiler Pan and Grid, Door Liner, Oven Bottom): Gentle scouring with a soapy scouring pad is effective. Rinse with a 1:1 solution of clear water and ammonia for difficult spots.
      • Oven and Broiler Racks: For non self-clean models, clean with a mild abrasive cleaner. After cleaning, rub sides with wax paper or baby oil for easier gliding. For self-clean models, racks can be left in during the cycle (they may dull) or removed and cleaned as above.
    • Oven Door Gasket: Do not clean, rub, damage, or remove the oven door gasket, as it is crucial for a good seal.
    • Oven Light Bulb: Disconnect power, press the wire holder to release the glass shield (some models), replace with a new 40-watt appliance bulb, and reassemble.
  • Self-Cleaning Oven (some models):
    • Preparation: Remove excess spillovers, broiler pan, utensils, and foil before starting the cycle. Clean the oven frame and door liner with soap and water.
    • Racks: Racks can be left in the oven during the cycle (they may dull) or removed. If left in, rub with wax paper or baby oil after cooling to restore gliding.
    • Precautions: Do not use commercial oven cleaners or protective coatings. Do not clean the oven door gasket. Do not use aluminum foil to line the oven bottom.
    • During Cleaning: Expect high temperatures, normal sounds of metal expansion/contraction, and odors as food soil is removed. Smoke may appear, especially with heavy spillovers. An exhaust fan is recommended.
  • Storage/Broiler Drawer: Removable for cleaning underneath the oven. Open, pull to stop, then tilt down (or up for larger models) and pull out over rollers. Reverse to replace. Flammable materials should not be stored in the drawer.
