This document serves as the operator's and maintenance manual for the ISOLA MURALE BAIN-MARIE, a refrigerated display unit designed for internal use in restaurants and shops.
Function Description:
The ISOLA MURALE BAIN-MARIE is a display cabinet primarily used for keeping food warm, featuring a bain-marie basin and heated shelves. It includes a protective dome that can be raised and lowered, internal lighting, and a refrigeration system. The unit is equipped with controls for temperature regulation and an acoustic alarm to indicate low water levels in the bain-marie basin.
Important Technical Specifications:
The appliance operates on mains voltage and frequency, which must match the values indicated on the rating plate (A). The power supply socket must be properly earthed, suitable for the rated current, and comply with IEC regulations, including a thermal-magnetic switch (commonly known as a circuit breaker) with an In value matching the rating plate, and a differential with an Id sensitivity of 30 mA. The power supply cable is H05 VVF, suitable for internal use. The unit is equipped with a Dixell/Emerson XR30CH or XR50CH controller for temperature management. The maximum weight for containers is 1.5 kg.
Usage Features:
- Installation: The unit should be unpacked carefully, removing all packaging materials and ensuring it is placed on a flat, level surface. The wheels have brakes for stability.
- Dome Operation: The protective dome is raised and lowered using an electric lifting system (A). To open, press "Key II" until fully open; to close, press "Key I" until fully down. Always ensure heated shelves and lamps are turned off at least 15 minutes before lowering the dome.
- Bain-Marie Basin: The basin is filled manually, taking care not to exceed the indicated MAX/MIN level. An acoustic signal will alert the user when water needs to be refilled. To empty, open the tap located at the rear of the machine.
- Controls: The front panel features controls for internal light (1), refrigeration system (2), manual defrosting (3), and a display (4) for temperature. The thermostat (A) allows setting the desired temperature using "SET or P" (5), "UP" (6), and "DOWN" (7) buttons.
- Container Holders: Protection film must be removed from the holders. Longer holders are placed on the long sides of the basin, and shorter holders fit into slots on the longer ones. Various configurations are possible depending on container sizes.
- Plate Holder (Optional): Shelves can be fastened to the outer cabinet using provided screws.
- Correct Use: The appliance is designed for adults only. Children should not tamper with controls or play with the unit. Modifications to the appliance's characteristics are forbidden. Repairs must be carried out by authorized technical assistance using original spare parts. The unit is suitable only for food storage.
- Safety: Always ensure the heating surfaces and lamps are switched on only when the plexiglass cover is open. Keep the machine away from flammable or explosive materials.
Maintenance Features:
- Cleaning:
- Internal Basin: Remove protective film from stainless steel parts. Clean with a soft sponge and neutral detergents. Remove obstructions from the float hole (A) and drainage hole (B). Drain residual water by opening the rear tap.
- Cover and External Parts: Clean with a soft, damp sponge. Avoid alcohol or solvent-based detergents, as they can damage the cover's transparency. Wooden surfaces should be cleaned with specific water-based, solvent-free products. Dry with a clean cloth.
- Bain-Marie Basin: Disconnect power, open the rear tap, clean with a sponge and water/sodium bicarbonate, dry thoroughly, then close the tap and reconnect power.
- Lamp Replacement: Open the dome, disconnect power. Grasp the lamp's protective grid, push towards the center, and pull down. Push the lamp towards one support to release the other end. Handle new lamps with a piece of paper, not bare hands. Reassemble in reverse order.
- Cover Lifting Motor Replacement: Support the dome, disconnect power. Remove ventilation grilles. Loosen the motor support screws located on the outer sides, under the basin. Remove the motor. If the motor is blocked by the lifting chain, remove all support screws and pull the motor and chain down. Disconnect motor power supply wires. Replace the motor and reassemble.
- Mirror Replacement: Disconnect power. Unscrew the rear support screws. Replace the mirror and reassemble.
