If necessary, lower the skim setting until no water is visible in the grease collection container.

Check the timer to ensure it's not set for excessive 'on' time, as the unit will pick up incidental water after all grease is removed. Also, verify that the water flow to the unit does not exceed the rated flow, and there are no drain line clogs downstream.
