The provided document is a "Care and Use Manual" for the Thermador Universal Cook'n'Vent® Downdraft System, covering 30" (CVS30R), 36" (CVS36R), and 45" (CVS45R) models.
Function Description:
The Thermador Universal Cook'n'Vent® is a downdraft ventilation system designed to replace an overhead hood. Its primary function is to capture and channel cooking odors, steam, and grease away from the cooking area. When not in use, the system can be conveniently hidden away (lowered) into the countertop. The system utilizes a blower (fan) to draw cooking odors out of the house and filters to condense and trap grease in the air.
Important Technical Specifications:
The manual outlines five primary parts of the system:
- The Intake: This is the part that raises to capture cooking odors, steam, and grease. The filters are located within the intake.
- UP/DOWN Push-button: Located on the top right of the intake, this button controls the raising and lowering of the intake.
- The Blower: This is the fan responsible for drawing cooking odors out of the house. The blower speed can be adjusted.
- Blower Speed Control Knob: Located on the right front of the intake, this knob controls the blower speed. It has four settings: "0" (Off), "1" (Low), "2" (Medium), and "3" (High). The intake must be raised to use this knob.
- Filters: These are located just behind the removable front panel within the intake and are designed to condense and trap grease.
The system is certified for use in the 50 states of the U.S.A., the District of Columbia, and Canada, as indicated by the UL listing.
Usage Features:
- Raising/Lowering the Intake: Press the UP/DOWN push-button once to raise or lower the intake. It is not necessary to hold the button. When raising, the intake stops automatically at its maximum height, and the blower automatically turns on to the previously set speed. When lowering, if the blower is operating, it will turn off.
- Stopping Intake Movement: Press the UP/DOWN push-button once while the intake is moving to stop it. Press it again to complete the cycle.
- Blower Operation:
- Turn the blower on before starting to cook for best results.
- Vary the blower speed as needed for the food or cooking method. Greasy or pungent foods require greater ventilation than boiling pasta.
- For gas cooktops, a lower blower speed should be used if the gas flame is distorted by air movement, the burner continually sparks (clicks), or the burner flame repeatedly blows out.
- The intake must be raised to use the blower speed control knob.
- Cooking Recommendations:
- A higher heat setting may be needed on the cooktop when the Cook'n'Vent® is in operation.
- Use a rear burner when browning or pan frying meat.
- Open a window or inside door slightly to improve ventilation.
- Always turn the hood ON when cooking at high heat or flaming foods.
- Use proper pan size appropriate for the surface element.
- Never leave surface units unattended at high settings to prevent boil-overs, smoking, and grease fires.
- SMOTHER FLAMES with a close-fitting lid, cookie sheet, or metal tray, then turn off the burner. Do NOT use water on a flaming pan. Use an extinguisher ONLY if it's a Class ABC extinguisher, you know how to operate it, the fire is small and contained, the fire department is being called, and you can fight the fire with your back to an exit.
Maintenance Features:
The manual emphasizes the importance of cleanliness for the system's efficiency.
- Regular Cleaning (After Each Use):
- Clean the intake front panel and back wall.
- Clean the filters.
- Cleaning the Intake (when raised):
- Turn off the blower ("0").
- Grasp the removable front panel at the top near the sides, pull up, and then forward. Set it aside.
- Remove the filters.
- Anodized Aluminum Top Cap (for Stainless) / Painted Top Cap (for Black/White): Not removable. Wash top and underside with hot sudsy water. Rinse and wipe dry, or apply Fantastic® or Formula 409® to a clean sponge or paper towel and wipe clean. DO NOT USE powdered cleansers or steel wool pads.
- Aluminum Mesh Filters: Clean in the dishwasher or by agitating in sudsy water. Ensure no soil is trapped in the fine mesh. Dry before reinstalling.
- Plastic UP/DOWN Push-button, Control Knob: DO NOT REMOVE. Wipe with a moist soapy sponge. Rinse and dry.
- Stainless Steel Front Panel & Back Wall: Wipe grease accumulation with a paper towel or sponge. Scrape heavy buildup with a plastic spatula. Clean with a soapy sponge; rinse and dry. Always wipe or rub with the grain. Wipe with Fantastik® or Formula 409® sprayed onto a paper towel. If heavy grease buildup, several applications may be necessary. Polish with Revere Ware® Metal Polish or Stainless Steel Magic® and a soft cloth. Remove water spots with a cloth dampened with white vinegar. Use Revere Ware® Instant Stainless Steel Cleaner to remove heat discoloration.
- Re-Assembling the Intake:
- Place the filters inside the intake, side by side, on the slats in front of the back wall. They will lean forward, and the tops of the outside two will rest against the support bars.
- Hold the front panel at the top near the sides, place the bottom edge over the front lower sill of the intake.
- Keeping the panel vertical, hook the top of the front panel to the intake.
- Occasional Cook'n'Vent® Care (Approximately Every Six Months):
- Remove any food soil that may have collected behind the access panels. The 30" and 36" models have two access panels; the 45" model has three.
- To Reach the Clean Out Area:
- Unplug the electrical cord.
- Unscrew the wing nuts on top of the access panels. Lift out the mounting channel and panels.
- Avoid the electrical connection box above the access panels. Be careful of sharp edges on the metal framework.
- Wipe up any accumulated grease or food in the "clean out" area using a general household degreasing spray or cleaner. Rinse and dry.
- Replace the access panels and mounting channel, tightening the wing nuts securely.
- Plug in the electrical cord.
- DO NOT TOUCH OR CLEAN the electrical connection box.
- DO NOT use the ventilating system without the filters in place or with grease-laden filters or surfaces.
- Clean ventilating fans frequently; grease should not accumulate on the fan or filter.
The manual also includes important safety instructions, warranty information, and customer service contact details.
