RECIPE GUIDE
• Ingredients
1. 2 pieces of mango About 70 g
2. Whole milk 70 ml
3. Whipping cream 40 ml
4. White sugar 20 g
• Preparation
1. Mash the mango using a fork or potato masher.
2. In a mixing bowl, whisk the whipping cream until light and uffy.
3. Add the mashed mango, whole milk, and white sugar to the whipping cream
and mix until well combined.
4. In the fridge or freezer, cool down the mixture to 5 - 10°C.
5. Switch the machine on and place the mixture inside the ice cream maker.
Mix until ready.
• Ingredients
1. 1/2 egg yolk
2. Whole milk 105 ml
3. Whipping cream 40 ml
4. White sugar 20 g
5. Matcha powder 5 g
6. Handful of raisins
• Preparation
1. Warm up the whole milk to 60°C.
2. Whisk the egg yolk and white sugar together until the sugar crystals have
disappeared.
3. Add the egg yolk and sugar mixture to the warmed milk and bring to a boil.
4. Remove from heat and cool down to room temperature.
5. In a mixing bowl, whisk the whipping cream until light and uffy and add to
the cooled down mixture, along with the matcha powder and the raisins.
Mix well.
6. In the fridge, cool down the mixture to 5 - 10°C.
7. Switch the machine on and place the mixture inside the ice cream maker.
Mix until ready.
