ROUTINE MAINTENANCE GUIDE
TOWN WOK RANGES ARE CUSTOM / MADE TO ORDER. THIS DOCUMENT DOES NOT ADDRESS ALL OPTIONS/ACCESSORIES
POSSIBLE. MAINTENANCE IS TO BE PERFORMED BY A QUALIFIED PERSON FAMILIAR WITH THE SUBJECT EQUIPMENT AND
HAZARDS INVOLVED. THIS DOCUMENT DOES NOT CLAIM TO COVER ALL POSSIBLE SCENARIOS OR ISSUES THAT MAY BE

Chamber insulation & chamber rings - This section should be evaluated by restaurant personnel daily to prevent
accelerated degradation of the range. Damaged items must be replaced as soon as possible. Damage caused by lack of
maintenance is not covered under warranty!
o York/EcoDeck ceramic sleeves: Replace if cracked or otherwise deteriorated.
o Masterrange brick: Replace missing or cracked mortar and bricks.
o Verify cast iron wok rings are not cracked or otherwise broken. Replace as needed.
o If rings are fully intact, clean and degrease the wok rings and areas around it.
o Clean the stainless steel top deck around the wok ring. Remove any grease and debris.
o EcoDeck units: Clean the welded return ring directly underneath the wok ring.
Stainless steel exterior and parts
o Clean and maintain stainless steel using appropriate cleaning methods and products. Do not use harsh
abrasives and clean in the direction of the grain.
o Tighten the (6) button head screws holding the 3-pipe wok rack. Use Loctite to further prevent loosening.
Gas train & valves
o Check for bent valve shafts & replace as needed.
o Tighten loose valve handles or replace as needed.
o If the valve has or is close to being in use for a year, apply a new coating of high temperature valve grease.
o Check for gas leaks around valve area and unions with a sniffer or bubble solution.
Pilot Safety System (if applicable)
o Light all pilots and check for proper operation. Cycle burners on/off and verify the pilot stays lit.
o Ensure pilot and thermocouple are mounted properly.
o Verify that the pilot flame is enveloping the top 3/8” to ½” of the thermocouple.
o Check the thermocouple connection at the safety valve. Make sure it’s tight and corrosion free.
o Replace pilots, thermocouples and safety heads as needed.

Tighten the six button head screws on the 3-pipe wok rack, using Loctite to prevent loosening.

Gas Train and Valve Maintenance

Valve Shaft and Handle Check

Check valve shafts for bends and handles for looseness, replacing or tightening as needed.

Valve Grease Application

Apply high-temperature valve grease to valves used for approximately one year.

Gas Leak Detection

Check for gas leaks around valve areas and unions using a sniffer or bubble solution.

Pilot Safety System Checks

Pilot Operation Verification

Light all pilots, check operation, and cycle burners to ensure pilots remain lit.

Pilot and Thermocouple Mounting

Ensure pilot and thermocouple are mounted properly and the flame envelops the thermocouple.

Thermocouple Connection

Check thermocouple connection at the safety valve for tightness and corrosion.

Component Replacement

Replace pilots, thermocouples, and safety heads as needed.

Burner and Pilot Maintenance

Pilot Burner Checks

Verify proper flame height, clean orifices/air holes, adjust valves, and ensure proper mounting.

Jet Burner Operation

Check all ports/jets for proper lighting. Ensure tips are intact and clean air holes/orifices.

Ring Burner Servicing

Disassemble air mixers, clear blockages, clean orifices, and reassemble for proper combustion.

Faucet System Maintenance

Chinese Swing Faucet Service

Check for leaks, tighten connections, replace aerators/spouts, or repair/replace the entire faucet.

Manual Faucet Inspection

Check for leaks, tighten handle screws/spout nuts, or replace cartridges/nozzles.

Water Wash and Sink System

EcoDeck Plunger Valve Check

Verify EcoDeck plunger valve operation. Clean or replace cartridge if stuck.

Water Distribution and Spray Bar

Check water distribution, clean spray bar, level unit, or adjust water pressure as needed.

Drain and Strainer Inspection

Check 2" drain for flow, clear blockages. Verify integrated scrap bin and mesh strainer.

Drip Pan Verification

Ensure all drip pans are in place and replace any broken or missing pans.
