Overview

This document is an installation manual for True Manufacturing Co., Inc.'s Traditional Reach-In commercial refrigerators and freezers. It provides comprehensive instructions for installation, operation, maintenance, and servicing of these units.

Function Description

The True Traditional Reach-In units are commercial refrigerators and freezers designed for open food storage in various foodservice and retail environments. They are built to provide reliable and trouble-free operation for many years, ensuring proper preservation of food products. The manual emphasizes the importance of correct installation and maintenance for efficient and successful operation.

Important Technical Specifications

  • Climate Class: Tested to IEC EN 60335-2-89 Climate Class 5 (109°F (43°C) temperature, 40% relative humidity) for safety, and EN 23953-2:2015 Climate Class 3 (77°F (25°C), 55% relative humidity) for performance.
  • Ambient Temperature: For proper operation, ambient temperatures should not be less than 60°F (15.5°C).
  • Refrigerant Type: Units may use Hydrocarbon Refrigeration (R290) or other refrigerants (R404A, R134A). Specific refrigerant type is indicated on the serial label.
  • Electrical Requirements: Units are designed for specific NEMA plug configurations (115/60/1 NEMA-5-15R, 115/208-230/1 NEMA-14-20R, 115/60/1 NEMA-5-20R, 208-230/60/1 NEMA-6-15R) and require a dedicated electrical circuit. International plug configurations vary by country and voltage.
  • Clearances:
    • T-Series Refrigerator: Top: 0", Sides: 0", Back: 1" (25.4 mm).
    • T-Series Freezer: Top: 12" Open (304.8 mm), Sides: 0", Back: 3" (76.2 mm).
  • Shelf Weight Capacity: Meets IEC Shelf Weight Capacity of 47lb/ft² (230kg/m²).
  • Leveling Legs/Castors: Adjustable legs provide 6" (152 mm) of clearance.

Usage Features

  • Temperature Control: Units feature either mechanical temperature controls or electronic temperature controls with digital displays. The electronic control can also function as a light switch.
  • Light Switch Location: On glass door models, the light switch is inside the top ceiling. For electronic controls, the up arrow on the digital display controls the light.
  • Flex Control: Some models include a Flex Control switch, located behind the front louver grill, to shift cabinet temperature settings between cooler and freezer modes.
  • Startup Procedure: After installation, the unit should be run empty for 24 hours to verify proper operation before loading product. A 5-minute wait is required before restarting if the unit is disconnected or shut off.
  • Airflow: Good airflow is critical. Product should not press against the sides or back wall and should remain at least 4" (101.6 mm) from the evaporator housing to ensure even product temperatures.
  • Defrost: Refrigerators with mechanical controls defrost during every compressor off-cycle. Freezers with mechanical controls defrost by time initiation. Electronic controls initiate defrost events to clear frost and ice buildup. Models TSID, TDBD, TCGG, and TMW do not have evaporator fans. Models TFM, TDC, THDC, and TMW require manual defrost.
  • Shelving: Adjustable shelving allows for customer application and meets specified weight capacities. Shelf clips are used to secure shelves into standards. TrueTrac organizers are available for gravity-feed applications.
  • Slide Door Operation: Instructions are provided for removing and adjusting slide doors, including the hold-open feature.

Maintenance Features

  • Condenser Coil Cleaning: Critical for efficient operation. Condenser coils accumulate dirt and require cleaning every 30 days or as needed. Cleaning involves removing the front louvered grill, brushing dirt from fins, and using compressed air or CO2 to clear blockages. A vacuum cleaner can be used for dirt around the condensing unit area. This is not covered by warranty.
  • Stainless Steel Care & Cleaning:
    • Opponents: Avoid scratches from abrasive tools, deposits from hard water, and chlorides (present in salt, food, water, and many cleaners).
    • Cleaning Tools: Use non-abrasive tools like soft cloths and plastic scouring pads.
    • Cleaning Agents: For routine cleaning, use white vinegar, ammonia, or good commercial detergents (without chlorides or phosphates). Stainless steel polishes (e.g., Zep, Weiman, Nyco, Ecolab) and olive oil can help prevent fingerprints. Degreasers (e.g., Easy-Off, Simple Green) are effective for heavy grease and food stains.
    • Polishing Lines: Always scrub parallel to the polishing lines (grain) when visible.
    • Rinsing: After using chlorinated cleaners, rinse and wipe dry immediately. Allow equipment to air dry to maintain the passivity film.
    • Prohibited Cleaners: Never use hydrochloric acid (muriatic acid) or cleaners containing quaternary salts.
    • Water Treatment: Soften hard water if possible to reduce deposits.
    • Restoration/Passivation: For stubborn stains or restoration, products like Brillo Cameo, Zud Cleanser, Ecolab Specifax First Impression Metal Polish, or Sheila Shine can be used, rubbing in the direction of the polish lines.
  • Component Replacement: Use OEM (original equipment manufacturer) components for servicing and replacement. A licensed service provider is recommended for repairs to ensure safety and proper function.
  • Warranty: A three-year parts and labor warranty is provided, with an additional two-year warranty for HFC compressors and four-year warranty for Hydrocarbon compressors. The warranty is void if specific procedures for refrigerant systems are not followed, such as drier replacement and micron level vacuums. It does not cover economic loss, product spoilage, improper usage, non-OEM parts, alterations, neglect, abuse, or improper electrical connections. The warranty is not transferable and applies only to units installed after January 1, 2020, for USA Foodservice & Retail, and after July 1, 2020, for Canada.
