User’s Manual
Improper installation, adjustment, alteration, service or maintenance can cause property damage, injury or
death. Read the installation, operating and maintenance instructions thoroughly before installing or
servicing this equipment.
If installing the fryer with Propane (LP) gas a Commercially Approved Regulator MUST be installed on the
fryer in addition to the tank regulator.
Units installed without an external appliance regulator will cause damage to parts and will void the
warranty.

Overview

This document is a user's manual for VESTA F Series Fryers, specifically models F3, F4, and F5. These are gas floor model fryers intended for commercial use only, not for household or residential use.

Function Description:

The VESTA F Series Fryers are commercial cooking appliances designed for deep-frying various food items. They operate using either natural gas or propane (LP gas). The fryers are equipped with a thermostat for temperature control, a pilot burner for ignition, and a high limit control for safety, which prevents the oil temperature from exceeding 450°F (though due to sensor tolerance, it may reach up to 475°F). An automatic pilot valve provides a safety shutoff if the pilot flame is extinguished.

  • Gas Supply and Burner Information:

    • Minimum Supply Pressure: 6" W.C. for Natural Gas, 12" W.C. for Propane.
    • Gas Connection: 3/4" NPT male connector on a 1 1/2" pipe, allowing connection with either a 1/4" or 1 1/2" NPT female connector.
    • Manifold Pressure (Regulated): 4" W.C. for Natural Gas, 10" W.C. for Propane.
    • Burner BTU Rate: 30,000 BTU per burner for all models.
    • Total BTU/Hr:
      • F3 (3 heat tubes): 90,000 BTU/Hr
      • F4 (4 heat tubes): 120,000 BTU/Hr
      • F5 (5 heat tubes): 150,000 BTU/Hr
    • Orifice Size (0-2000 ft altitude): #39 for Natural Gas, #52 for Propane.
    • Regulator Requirement for Propane (LP) Gas: A Commercially Approved Regulator MUST be installed on the fryer in addition to the tank regulator. The appliance regulator must be set to a gas pressure between 11” W.C. and 12” W.C. Failure to install an external appliance regulator or setting it incorrectly will void the warranty and can cause damage.
  • Clearances from Combustible Construction:

    • Sides: Six (6) Inches
    • Rear: Six (6) Inches
    • A minimum of 16 inches space is required between the fryer and surface flames from adjacent equipment. A flame guard is acceptable if allowed by local code.
    • The unit is suitable for installation on combustible floors.
    • No additional side and rear clearance is required for service as the fryer is serviceable from the front.
  • Ventilation:

    • Units must be installed under a ventilation hood.
    • The exhaust fan should be installed at least 2 feet above the vent opening at the top of the fryer.
    • The unit is not intended to be connected directly to an outside flue.

Usage Features:

  • Installation: Requires installation by a qualified service technician to maintain warranty validity. Includes steps for unpacking, installing legs or casters (with restraints for safety), and flue installation.
  • Leveling: The unit must be level for maximum performance and proper ventilation. Each leg or caster can be adjusted for leveling.
  • Gas Connection: Connects to a 3/4" male NPT line. All pipe joints and connections must be tested for gas leaks using soapy water; open flames are strictly prohibited.
  • Lighting Procedure: Involves turning the thermostat to "OFF," pressing and turning the gas valve knob to "PILOT," igniting the pilot with a lit match, holding the knob for 30 seconds, and then turning it to "ON" once the pilot stays lit. The thermostat should only be turned "ON" after the frypot is filled with oil or shortening.
  • Relighting: If the main burner ignition fails, a five-minute purge period must be observed before attempting to relight.
  • Filling the Frypot: Requires closing the drain valve, cleaning the frypot (especially when new), and carefully filling with the recommended amount of solid shortening or oil. When using solid shortening, it must be packed into all spaces around and above the heat tubes before lighting to prevent overheating and potential fire.
  • Cooking Hints: Provides tips for optimal frying, such as monitoring oil temperature, filtering/replacing oil, thorough cleaning to prevent gum deposits, and using different oils for specific food types.

Maintenance Features:

  • Daily Cleaning: Involves draining the frypot, flushing sediment, wiping the basket support frame and frypot interior, and straining/filtering the oil before refilling.
  • Weekly Cleaning: A more thorough cleaning that includes boiling out the frypot with a solution of warm water and boil-out compound to soften gum deposits and carbon spots, followed by scrubbing, draining, and rinsing with clean water.
  • Monthly Cleaning: Includes the weekly cleaning procedure, plus checking around the burner and orifices for lint accumulation and ensuring burner carry-over ports are unobstructed.
  • Stainless Steel Surfaces: Cleaning with ordinary soap and water, or a cleanser for tougher stains, rubbing in the direction of the polishing lines. Specific warnings against using abrasive materials like steel wool, wire brushes, or scrapers that can mar the finish and lead to corrosion.
  • Parts: Replacement parts can be ordered through an Authorized Parts Distributor. The serial plate, located inside the front door, provides the model and serial number necessary for ordering. Only genuine parts should be used to avoid voiding the warranty.
