Overview

This document provides a comprehensive manual for Victor Light Duty Hotcupboards, covering various models including DUKE, HED60100, HED30100, HED80100, HED40100, HED50100, HED90100, and HED20100. The manual outlines the function, installation, usage, maintenance, and warranty information for these hotcupboards.

Function Description:

The Victor Light Duty Hotcupboards are designed to maintain food at a satisfactory temperature before serving. They are not intended for heating up or cooking food. These units are thermostatically controlled, either by an adjustable knob on the control panel or by an internal pre-set thermostat. The hotcupboards are suitable for various catering environments where keeping food warm is essential.

Important Technical Specifications:

  • Power Supply: The appliance is fitted with a 13 Amp fused plug and requires connection to a suitable 13 Amp socket outlet. It is designed for 230 - 240V A.C. supply only. Users must ensure the electricity supply matches the model's data plate specifications.
  • Wiring Code: The mains lead wires are colored according to the following code: Green and Yellow for Earth (marked E or ÷), Blue for Neutral (marked N or black), and Brown for Live (marked L or red). This appliance must be earthed.
  • Thermostatic Control: Models feature either an adjustable thermostat knob or a pre-set internal thermostat for temperature regulation.

Usage Features:

  • Unpacking and Assembly:
    • All protective coating on stainless steel surfaces must be removed.

    • Static Models: Position the unit where it will be used and level it by adjusting the feet (clockwise to raise, anticlockwise to lower).
    • Mobile Models: Equipped with four castors, two of which are braked, for easy movement.
  • Installation:
    • If positioned near walls, partitions, or kitchen furniture, these surfaces should be made of non-combustible material or clad with suitable non-combustible heat insulating material, adhering to fire preventative regulations.
    • Connect the 13 Amp fused plug to a suitable 13 Amp socket outlet.
  • Best Performance Procedure:
    • Pre-heating: Pre-heat the hotcupboard empty for 30 minutes with the control knob turned to full (or simply switched on for pre-set thermostat models).
    • Loading: Load the hotcupboard as required. The optimal control knob position will vary based on food quantity, temperature, and door opening frequency. Experience will guide the best setting.
    • Temperature Setting: Set the thermostat to the desired temperature. No further adjustment is needed for pre-set thermostat models.

      • Do not splash the unit with bleach when cleaning around the counter; if this occurs, rinse the surface immediately.
      • Do not allow corrosive foodstuffs (fruit juices, vinegar, mustards, pickles, mayonnaise) to remain on stainless steel for long periods; wash and rinse away.

      2. Grip the sides of the outer door and hinge it out (1) until it can be lifted off the track (2) and removed from the cupboard (3). Repeat for the second door.
    • Replacement: Reverse the process, ensuring the correct door is refitted first and sliding them left to right for proper fit.
  • Lubrication:
    • Lubricate the doors once or twice a year with petroleum jelly to ensure smooth sliding.
    • Remove the doors, apply a small amount of lubricant to the wheel/track fixed to the door, replace the door, and slide it side to side for even distribution.
