      Rapid shortening breakdown in your Vulcan-Hart Fryer can occur due to several reasons: * Excessive temperature settings (over 375°F). Adjust the temperature setting. * The shortening is not being filtered regularly. Adjust the filtering schedule. * Incorrect preparation of breaded food. Do not use salt, allow breading time to adhere to food, do not allow loose flour to fall into shortening from hands, do not add straining or drippings from meat fats to shortening, use correct shortening and follow temperature recommendations. * It can be helpful to take out 10% to 15% of the shortening and check thermostat settings with a thermometer periodically.

      If the temperature of the shortening in your Vulcan-Hart Fryer drops or requires excessive recovery time, this could be due to: 1. Insufficient gas supply to the unit. Adjust the gas supply at the gas combination valve. 2. The ventilation system pulling heat out of the heat exchanger and flue box. Relocate the fryer. 3. Overloading the fryer capacity. Adjust loads accordingly. 4. Thermostat calibration issues. Calibrate or replace the thermostat.

      If the pilot light won't stay lit and your Vulcan-Hart Fryer shuts off, consider these potential causes: * A malfunctioning thermopile or loose/dirty connection in the thermopile. Check the thermopile function and connections, adjusting or replacing as needed. * The gas supply is turned off or disconnected. Clean burner orifice and air openings as required. * Pilot burner orifice and air openings need cleaning. Check each post on the combination valve to the ground. If zero resistance, replace the combination valve. * A shorted combination valve. Check the high limit to see if the NC contacts are open. * High limit is open.

Check the gas pressure on the submanifold fitting when the fryer is in operation. * Gas pressure being too low at the submanifold. Check other equipment attached to the same gas line. * Adjust gas pressure at submanifold to not less than 4.0" W.C. (natural and mixed gas) or 10.0" W.C. for propane gas.
