This document is an instruction booklet for a Zanussi Built-In Oven, model ZBS 773. It provides comprehensive information for both the user and the installer, covering safety, operation, maintenance, and technical specifications.

Function Description:

The Zanussi ZBS 773 is a multi-function built-in electric oven designed for domestic cooking. It offers a variety of cooking functions, including:

  • Fan Cooking: Utilizes a fan and a heating element around it to circulate hot air, ensuring even temperature distribution and allowing for simultaneous cooking on multiple shelves without flavour transference. This function offers faster preheating and generally requires lower temperatures (20-25°C less than conventional cooking).
  • Conventional Cooking: Heat comes from both top and bottom elements, providing even heating. This is suitable for single-level cooking and dishes requiring extra base browning (e.g., quiches, flans) or top browning (e.g., gratins, lasagnes).
  • Full Grill: Activates the full grill element for grilling large quantities of food.
  • Pizza Oven: Combines direct heat from the bottom element with fan circulation to cook pizza bases and toppings/fillings effectively.
  • Thermal Grilling: An alternative grilling method where the grill element and oven fan operate alternately, circulating hot air. This reduces the need to check and turn food and minimizes cooking smells. It's a gentler cooking method, potentially taking longer than conventional grilling, but allows for cooking larger quantities simultaneously. Maximum temperature for this function is 200°C.
  • Baking Function: Uses both top and bottom elements with fan circulation, ideal for baking cakes, biscuits, and bread.
  • Bottom Heating Element: Provides heat from the bottom only, useful for finishing dishes or blind-baking pastry.
  • Inner Grill Element Only: For grilling small quantities, providing quick direct heat to the central area of the grill pan, which can help save energy.
  • "Fast Heat Up" Function: Accelerates the preheating process for any cooking function, reaching the desired temperature in 10-15 minutes.
  • Defrost Function: Operates the oven fan without heat to circulate air at room temperature, speeding up the defrosting process for delicate foods like cream-filled gateaux, iced cakes, pastries, bread, and yeast products. The temperature setting for defrosting is fixed at 32°C.

The oven is controlled by an electronic programmer, allowing selection of cooking function, temperature, and automatic timing. It features a 24-hour clock and programming options for minute minder, cooking duration, and delayed start/stop.

Usage Features:

  • Control Panel: Features a cooking function display, temperature display, time display, and push buttons for ON/OFF, oven function control, fast heat up/defrost, temperature control, decreasing/increasing time/temperature, minute minder, cooking time, and end of cooking time.
  • Shelf Levels: Six shelf levels are available, with two anti-tip shelves supplied. Shelf positions are counted from the bottom.
  • Cooling Fan: Operates during cooking to keep controls cool and may run on after the oven is switched off.
  • Oven Door: Designed to be closed during grilling. Users are advised to stand clear when opening and support the door until fully open.
  • Cookware: Any oven-proof cookware up to 250°C can be used. Baking trays larger than 30 cm x 35 cm are not recommended as they may restrict heat circulation. Cookware material and finish can affect browning results (e.g., aluminium/earthenware/shiny utensils reduce browning, while enamelled cast iron/dark utensils increase browning).
  • Condensation and Steam: Normal during cooking; users are advised to stand back when opening the door and regularly wipe away condensation.
  • Programming: Detailed instructions are provided for setting the time of day, minute minder, and programming the oven to switch off automatically or to switch on and off at specific times.

Maintenance Features:

  • General Cleaning: The oven should be kept clean at all times to prevent fat/foodstuff build-up, especially in the grill pan, which could lead to fire. Always allow the oven to cool down and switch off the electrical supply before cleaning.
  • External Cleaning: Control panel, oven door, and door seal should be wiped with a soft cloth wrung out in warm soapy water. Bleach and harsh abrasives should be avoided.
  • Door Glass Panels: Clean with warm soapy water. For heavy soiling on inner glass, Hob Brite is recommended. Avoid paint scrapers. Do not clean while warm to prevent shattering.
  • Oven Cavity: Best cleaned while warm with a soft cloth and warm soapy water. For set soilage, a process involving a grill/meat pan with boiling soapy water and fan oven function at 50°C is recommended to soften splatters.
  • Oven Shelves and Shelf Supports: Can be soaked in warm soapy water and cleaned with a soap-impregnated pad. Shelf supports are removable for easy cleaning.
  • Grease Filter: Must be fitted over the vents in the back panel to prevent fat build-up on the fan impellor. It should be cleaned after every use, either in a dishwasher (65°C wash) or by soaking in boiling water with automatic washing powder/dishwasher powder.
  • Hinged Grill Element: The grill element can be unfastened and pulled down to allow easy cleaning of the oven roof.
  • Oven Light Replacement: Instructions are provided for replacing the 15W, E14 oven light bulb.
