      If the bottom of your pies are burning before the toppings are cooked in your Bakers Pride oven, several factors could be at play: * The deck temperature might be too high, especially during slow periods. Try reducing the thermostat setting by 50° - 75° below your normal baking temperature. Once the decks cool, begin cooking and immediately increase the thermostat setting by 50° - 75°. * The micro slides might be closed too much. Open the micro slides (push-in) to increase top heat. * The oven might have been left “ON” overnight. Ensure the oven is turned to the “Pilot” position overnight, not left on a high temperature setting. * The exhaust fan might be too powerful. Reduce the fan speed.

      If the bottom of your pies are undercooked in your Bakers Pride oven, it could be due to a couple of reasons: * If you're repeatedly using the same area of the deck, the temperature in that area will decrease. Rotate the pies to unused areas of the bake deck that are hotter to cook the bottoms faster. * The micro slides might be open too much. Close the micro-slides (pull out) until you reach the desired combination. This will help decrease the top heat.
