Start fire with log cabin method, add fuel, and build coals for an hour before placing griddle.
Lower griddle onto fire pit when flames are below rim, turn handles down, and level with tabs.
Allow griddle to heat for 5-10 minutes to reach 450-500°F, starting with a low flame.
Use two people to lift and remove the griddle immediately after cooking is complete.
Test griddle heat by sprinkling water; it should pop and sizzle.
Exercise fire precautions, never leave unattended, especially around children and pets.
Remove griddle promptly; avoid placing on combustible surfaces after use.
Clean the griddle while warm using paper towels or a spatula to remove residue.
Apply a thin layer of food-grade oil to the metal with a paper towel after cleaning.
