Overview

The Chef'sChoice Model 610 Electric Food Slicer is a versatile kitchen appliance designed for slicing a variety of foods, including bread, meat, cheese, vegetables, and fruits. It incorporates EdgeCraft's proprietary Advanced Power-Cooling® system, which helps keep the power-train cool, allowing for continuous slicing without interruption.

Function Description:

The primary function of the Chef'sChoice Model 610 is to uniformly slice food items. It features a powerful motor and a sharp stainless steel blade that can be adjusted to achieve various slice thicknesses, from wafer-thin to thicker cuts. The slicer is designed for household use and is not intended for commercial applications. It is capable of handling a wide range of food textures, though it is recommended to chill meats thoroughly before slicing for best results, and to partially freeze foods with uneven textures (like fish or steaks) to facilitate easier and more consistent slicing. The slicer is also useful for preparing ingredients for food dehydrators, canning (e.g., cucumbers and onions for pickles, apples for pies), and slicing homemade or bakery bread.

Important Technical Specifications:

  • Power: The slicer operates on a 120V AC outlet and requires a three-prong grounded connection.
  • Fuse: It is equipped with a protective fuse to prevent motor overheating. A spare fuse is supplied. The fuse is a Slo-Blo type, rated at 1.25A and 250V. Approved replacement fuses include Hollyland 51S, Schurter FST, or Bussman GDCS505.
  • Blade: The slicer features a stainless steel cutting blade.
  • Cord: A short power cord is provided to minimize entanglement and tripping hazards. If an extension cord is used, it must be a 3-wire, three-prong polarized cord with an electrical rating not less than that of the slicer.

Usage Features:

  • On/Off/Pulse Power Switch (1): Allows for continuous slicing (ON) or momentary slicing (PULSE) by holding the switch down.
  • Thickness Guide Plate (2): Guides the food for consistent slicing.
  • Food Pusher (3): Essential for safely holding food against the thickness guide plate and protecting hands from the blade. It is crucial to always use the food pusher during operation to prevent serious personal injury.
  • Food Carriage (4): Holds the food item being sliced. It moves smoothly along a carriage track (5).
  • Thumb Guard Plate (4a): A safety feature on the food carriage that can be moved in front of the blade's cutting edge and locked in place when the slicer is not in use, protecting users and children from accidental contact with the blade.
  • Thickness Control Knob (7): Used to adjust the desired slice thickness. It can be set to "0" to secure the blade guard and for storage.
  • Carriage "Lock/Remove" Control (10): This button has three positions:
    • "Lock": Secures the carriage in place, covering the blade, for safety when the slicer is not in use, being moved, or stored.
    • "Slice": Releases the carriage for normal slicing operation.
    • "Remove": Allows for the complete removal of the food carriage for cleaning.
  • Cord Storage Compartment (13): Provides a convenient place to store excess power cord.
  • Safety Precautions:
    • Always read instructions before use.
    • Never immerse the power unit in water or operate in wet areas.
    • Keep hands on recommended push surfaces when the blade is powered.
    • Do not touch the blade's edge when powered. When power is off, touch the blade only for cleaning.
    • Do not operate under the influence of alcohol or medication.
    • Unplug the slicer when not in use, before assembling/disassembling parts, or cleaning.
    • Never feed food by hand; always use the food pusher.
    • Do not attempt to cut frozen foods or foods with bones.
    • The slicer should be placed on a clean, dry, smooth surface with the carriage to the right and the thickness control knob to the left for optimal use.

Maintenance Features:

  • Cleaning:
    • Always unplug the slicer before cleaning.
    • Slicer parts that come into contact with food can be removed for thorough cleaning.
    • Use a soft cloth or sponge with mild soap or spray cleaner. Rinse and dry.
    • DO NOT IMMERSE SLICER IN WATER.
    • DO NOT WASH ANY PART OF THE SLICER IN A DISHWASHER.
    • Food Carriage: Can be removed for cleaning by sliding the control button to the "Remove" position. The carriage guide should be cleaned and lightly lubricated with a few drops of acid-free light household oil (e.g., sewing machine oil).
    • Stainless Steel Blade: To remove, insert a coin into the slot of the blade fastening screw (11) and turn it clockwise until the screw is fully removed. Carefully lift the blade off, avoiding contact with the edge. Clean the blade and motor housing with a damp cloth. Sanitize the blade with a brush and antibacterial soap. Lubricate the blade support posts and the drive gear with Vaseline. To reattach, align the blade on its hub and turn the fastening screw counterclockwise to tighten (do not over-tighten).
    • Thickness Guide Plate: Can be removed for cleaning after the blade has been removed. Turn the thickness control knob counterclockwise past "0" to the "PLATE RELEASE" position, then pull the plate off. After cleaning, lightly lubricate the two steel rods with Vaseline. Reattach by inserting the rods into the holes, ensuring the knob is aligned with "PLATE RELEASE," then push the plate fully in and turn the knob counterclockwise to "0."
    • Rubber Feet (6): Clean with a grease-removing cleaner, mild detergent, or alcohol.
    • Slice Deflector (9): This detachable part ensures smooth deflection of slices onto the tray. It can be removed for cleaning, but only after the slicer blade and thickness control plate have been removed. Grasp with thumb and forefinger and pull it out; it should snap out easily. Always reinstall before installing the blade or thickness control plate.
  • Fuse Replacement: If the motor overheats and the fuse fails, ensure the power switch is OFF, the cord is unplugged, the thickness plate is at "0," and the food carriage is locked. Turn the slicer over to access the fuse holder underneath the motor housing. Unscrew the holder, remove the old fuse, and replace it with an approved new one. Reinsert and rotate to lock.
  • Service: For service needs, the slicer can be returned to EdgeCraft Corporation. It is recommended to include a brief description of the problem and return address. The product comes with a one-year limited warranty covering defective material and workmanship under normal care.
