Overview

The Crown Gas Tilting Skillets, models GTS-30 and GTS-40, are commercial cooking appliances designed for a variety of food preparation tasks, including braising, frying, and simmering. These units are gas-fired and feature a tilting mechanism for easy emptying and cleaning of the pan.

Function Description

The primary function of the Gas Tilting Skillets is to provide a large-capacity cooking surface with precise temperature control and the ability to tilt the pan for convenient food removal and cleaning. They are suitable for high-volume commercial kitchens, allowing for efficient preparation of large batches of food. The gas burners heat the pan, and a thermostat maintains the desired cooking temperature. A safety switch automatically turns off the gas supply when the pan is tilted, ensuring safe operation.

Usage Features

Installation:

  • Requires immediate inspection for shipping damage upon unpacking.
  • Installation must conform to local codes, National Fuel Gas Code (ANSI Z223.1/NFPA 54), or Natural Gas and Propane Installation Code (CSA B149.1).
  • Electrical grounding is mandatory.
  • Adequate ventilation is crucial, conforming to ANSI/NFPA 96 Standard for Ventilation and Fire Protection of Commercial Cooking Operations.
  • The appliance must be level and securely anchored to the floor using anchoring holes in the flanged adjustable feet. Bolts and flanged feet should be sealed with Silastic or equivalent compound.
  • A gas shutoff valve must be installed in the gas line ahead of the unit.
  • For units with casters, installation requires a connector compliant with ANSI Z21.69-CSA 6.16 and a quick-disconnect device compliant with ANSI Z21.41-CSA 6.9, with adequate means to limit appliance movement.

Operation:

  • Before First Use: Clean protective metal oils from all surfaces and the pan interior using a non-corrosive, grease-dissolving commercial cleaner, then rinse thoroughly and dry.
  • Lighting Procedure:
    1. Open the manual gas shut-off valve.
    2. Ensure the skillet pan is in the down (horizontal) position.
    3. Turn the "POWER" switch "ON".
    4. Set the thermostat dial to the desired temperature. The red "TEMPERATURE" pilot will illuminate.
    5. The green "IGNITION" pilot should remain on with the "TEMPERATURE" pilot, indicating normal ignition and operation. If "IGNITION" goes off while "TEMPERATURE" remains on, it indicates ignition failure, requiring a five-minute shut-off period before restarting.
    6. Once the set temperature is reached, both pilots will turn off, and the unit will cycle on and off to maintain the temperature.
  • Tilting the Skillet:
    1. Lift the lid.
    2. Turn the handwheel clockwise to tilt the pan to the desired position.
    3. A safety switch automatically turns off the gas supply when the pan is tilted.
    4. To return the pan to the horizontal position, turn the handwheel counterclockwise.
    5. Important: Do not attempt to tilt the pan with the lid down.
  • Daily Shutdown:
    1. Turn the thermostat dial to "off."
    2. Turn the power switch "off."
    3. Close the manual gas shut-off valve.
  • Safety Precautions:
    • The appliance and its parts become hot during operation; exercise caution.
    • If gas is smelled during lighting, immediately shut off the gas supply and correct the leak.
    • In case of main burner ignition failure, observe a 5-minute purge period before re-establishing the ignition source.
    • Never use an open flame to check for gas leaks; use soapy water.
    • Do not store or use gasoline or other flammable vapors/liquids near the appliance.
    • Do not obstruct combustion and ventilation air flow.
    • Do not operate the unit during a power failure.
    • Post instructions for gas smell (obtained from local gas supplier) in a prominent location.
    • This product is intended for commercial use only, not for household use.

Maintenance Features

Cleaning:

  • Clean the gas-fired tilting skillet after each use.
  • Disconnect the power supply before cleaning or servicing.
  • Keep exposed cleanable areas clean at all times.
  • Thoroughly wash the pan and lid with mild detergent and water. Soak if necessary to remove stuck product.
  • Clean around the burner air mixer and orifice to remove lint.
  • Visually ensure carry-over ports are unobstructed.
  • Rinse the entire unit and dry, avoiding getting water into the electrical box or any electrical components.
  • Caution: Do not use corrosive cleaning agents.

Scheduled Maintenance:

  • At least twice a year: Have an authorized service person inspect and lubricate the tilt mechanism, replacing any worn or damaged parts.
  • At least twice a year: Have an authorized service person clean and adjust the unit for maximum performance.
  • All units are factory-adjusted. If operational problems occur at initial installation, verify the gas type and manifold pressure against the rating plate information.

Troubleshooting (Common Issues):

  • Burners Not Coming On: Check if gas supply is "OFF," manual shut-off valve is "OFF," thermostat is not "ON," pan is not in the lowest position, ignition control is not functioning, or unit electrical supply is not plugged in/turned on.
  • Burners Producing Carbon Deposits: Check for wrong size orifices, improperly adjusted burner air, wrong gas supply, or incorrect pressure at the supply.
  • Pan Difficult to Tilt: Check if the unit is not level, trunnion housing requires grease, thrust bearing is too tight, segment gear is worn, or worm gear is worn.

General:

  • Retain the installation and operation manual for future reference.
  • For service or replacement parts, contact a Crown Authorized Service Agency or dealer, providing the model number, serial number, and type of appliance.
