Overview

The Cuisinart Alfrescamoré Outdoor Pizza Oven, Model CPO-600, is a portable gas-powered appliance designed for outdoor use to create brick oven-style pizzas. It is intended for residential use and is not suitable for commercial applications or installation in boats or recreational vehicles. The oven operates exclusively with liquid propane (LP) gas cylinders, specifically 1.00 lbs (465g; 16.4oz) propane cylinders, and is equipped with a CGA No.600 cylinder connection. The use of natural gas or any other fuel source is explicitly prohibited and will void the warranty.

Function Description:

The primary function of the Cuisinart Alfrescamoré Outdoor Pizza Oven is to cook pizzas outdoors, mimicking the high-temperature cooking environment of a traditional brick oven. It features a burner system that heats a cordierite pizza stone, allowing for even cooking and crispy crusts. The oven includes a hinged lid to retain heat and facilitate cleaning, a smoke chip cup for adding wood-fired flavor, and a warming tray to keep cooked pizzas warm. The appliance is designed for ease of assembly and operation, with clear instructions for lighting, gas cylinder installation, and maintenance.

Important Technical Specifications:

  • Model: CPO-600
  • Fuel Type: Liquid Propane (LP) gas only.
  • Cylinder Compatibility: 1.00 lbs (465g; 16.4oz) propane cylinders with CGA No.600 connection. Cylinders must be constructed and marked in accordance with U.S. Department of Transportation (D.O.T.) or Canadian standards (CAN/CSA-B339).
  • Clearance Requirements: Must be located at least 24 inches (61cm) from the back and sides of any combustible or non-combustible materials or construction. Not to be used under overhead unprotected combustible construction.
  • Operating Temperature: Heated liquids remain at scalding temperatures long after cooking; cooking appliance should cool to 115°F (45°C) or less before touching. The oven is designed to reach high temperatures suitable for pizza cooking, though cold or windy conditions may affect heating time.
  • Components: Includes a lid and firebox, leg assembly, warming tray, flame tamer, flame tamer lock pins, pizza stone holder, cordierite pizza stone, control knob, smoke chip cup, and pizza peel.
  • Dimensions (Cylinder): D10cm x H20cm (for 1.00 lbs propane cylinders).

Usage Features:

  • Outdoor Use Only: Strictly for outdoor use; never in a building, garage, or any enclosed area.
  • Assembly: Requires assembly of the leg assembly, flame tamer, pizza stone holder, pizza stone, control knob, and warming tray. Washers and nuts are used to secure components.
  • Gas Cylinder Installation: The LP gas cylinder is connected by pushing it into the threaded regulator connector and turning clockwise until tight (hand-tighten only, no tools). Removal involves turning the cylinder counterclockwise.
  • Leak Check: A leak check must be performed before each use and every time the cylinder is connected. This involves applying a soap and water solution to connections and checking for bubbles.
  • Lighting Instructions:
    • Igniter Lighting: Open lid, turn control knob to "OFF," push and turn counterclockwise to "Start/High." The igniter will click and light the burner. If ignition doesn't occur within 5 seconds, turn off, wait 5 minutes, and repeat.
    • Match Lighting: Open lid, turn control knob to "OFF." Strike a long wooden match and position it through the match lighting hole near the burner. Push down and turn the control knob counter-clockwise to "High."
  • Pre-heating: Before first use, operate the grill for about 15 minutes with the lid closed and gas on "HIGH" to "heat clean" internal parts and dissipate paint odor.
  • Pizza Cooking: Pizzas should be created directly on the pizza peel, using corn meal to prevent sticking, then slid into the oven. The hinged lid should remain closed as much as possible to retain heat.
  • Warming Tray: Slides out to hold cooked pizzas, keeping them warm. Caution is advised as this area can get hot.
  • Smoke Chip Cup: Integrated cup for adding wood chips to impart smoky, wood-fired flavor. Wood chips should be soaked in water for about an hour to prevent ignition. If chips ignite, it's contained within the steel and aluminum, but may cause soot or discoloration.
  • Tool Hooks: Two hooks on the left carry handle flip up for storage and down for hanging tools while cooking.

Maintenance Features:

  • Regular Care: All maintenance should be performed when the grill is cool and the fuel supply is turned off. Periodically inspect and tighten hardware.
  • Exterior Cleaning: Clean exterior surfaces with warm soapy water and stainless steel cleaner. The drip tray should be washed in warm soapy water (not dishwasher safe).
  • Venturi Tube Cleaning: Regularly inspect and remove dirt from the Venturi Tube screen cover to prevent blockages from spider nests or wasp mud, which can cause gas flow issues or fire. Disassembly or alteration of the fuel supply system is not recommended and requires professional assistance if repairs are needed.
  • Pizza Stone Cleaning: Debris can be scraped off. The stone can be washed with water, but detergents should not be used as the porous stone will absorb them. The stone can also be "baked" clean by running the oven on high for about 15 minutes with nothing on it to burn off material.
  • Interior Cleaning: The cooking grate can be cleaned with a grill brush. For best results, clean when the grate is warm (not hot). The cool cooking grate can also be removed and cleaned with warm soapy water.
  • Burner Maintenance: Check burner orifice holes for obstructions and gently brush with a small brush if needed (with gas bottle disconnected). Ensure the burner opening is properly positioned over the valve orifices.
  • Flame Tamer: Must be in place during operation. Edges and surface can be sharp; handle with care. Do not apply cleaners or liquids to the burner element.
  • Fuel Level Check: Gently shake the LP bottle to check for liquid fuel remaining.

Safety Warnings:

  • Never operate unattended.
  • Keep children and pets away from the grill.
  • Do not use in high wind.
  • Do not move appliance when in use.
  • Do not operate if there is a gas leak.
  • If gas odor continues, shut off gas, extinguish open flames, open lid, and call the fire department.

  • Do not store an unconnected LP cylinder near the appliance.
  • Never operate within 10 feet (3.05m) of any other gas cylinder or 25 feet (7.5m) of any flammable liquid.
  • Have a type BC or ABC fire extinguisher readily available when cooking with oil or grease. Do not use water on oil/grease fires.
  • Appliance will be hot during and after use; use insulated oven mitts or gloves.
  • Do not alter the grill in any manner.
  • Do not use charcoal or lighter fluid.
  • Do not use gasoline, kerosene, or alcohol for lighting.
  • Do not store a spare LP-gas cylinder under or near this appliance.
  • Never fill the cylinder beyond 80 percent full.
