The Cuisinart Limited Edition Metal™ Food Processor (MP-14N Series) is a powerful and versatile kitchen appliance designed for a wide range of food preparation tasks. It features a robust cast metal housing base with a vertically projecting shaft and a user-friendly push-button control panel. This model is equipped with a 14-cup work bowl and a cover featuring the Cuisinart® Supreme® Wide Mouth Feed Tube, which is more than two and a half times the size of other available feed tubes, making it ideal for slicing whole fruits and vegetables. The pusher assembly, consisting of a large and small pusher, slides inside the feed tube to guide food during processing.
Key features include a unique PowerPrep® Metal Dough Blade, specifically designed to work with the dedicated DOUGH control for making perfect yeast doughs in seconds. A locking device prevents heavy dough from driving the blade up on the shaft. The machine also comes with a sharp metal chopping/mixing blade, a serrated slicing disc, a shredding disc, and a detachable stem for discs, allowing for compact storage. A whisk attachment, spatula, recipe and instruction books, and a How-to DVD are also included.
Function Description:
The food processor excels at chopping, mixing, slicing, shredding, puréeing, kneading, whipping, and beating.
- Chopping/Mixing: The metal chopping blade can chop raw and cooked fruits, vegetables, meat, fish, and cheese to various consistencies, from coarse to a fine purée. It also makes nut butters, mayonnaise, sauces, and mixes tender, flaky pastry, cakes, frostings, cookies, quick breads, muffins, and biscuits.
- Slicing: The serrated slicing disc produces beautiful, whole slices without torn edges. It can slice whole fruits and vegetables, cooked meat, semi-frozen raw meat, and loaves of bread.
- Shredding: The shredding disc processes most firm and hard cheeses into long, attractive shreds, and also shreds vegetables like potatoes, carrots, and zucchini, and processes nuts and chocolate to a grated texture.
- Kneading: The PowerPrep® Metal Dough Blade, in conjunction with the DOUGH control, mixes and kneads yeast doughs quickly and efficiently. It's designed for doughs that are too stiff to knead comfortably by hand.
- Whipping/Beating: The whisk attachment adds volume to egg whites, heavy or whipping cream, potatoes, and light sauces. Its thin stainless steel beaters aerate food, making it lighter and fluffier. It can produce extra-light egg whites for meringues and whips cream to soft or stiff peaks.
Important Technical Specifications:
- Work Bowl Capacity: 14 cups for processed food, 3 pounds for bread dough (6 cups all-purpose flour or 3-1/4 cups whole grain flour), 5 cups all-purpose flour for pizza dough, 3 cups for nut butters, 14 cups for sliced/shredded food, one 18.5 oz cake mix, dough for 90 cookies, 3 cups for thin liquids, and 6 cups for thick liquids.
- Motor: Operates on standard line operating current. Features an automatic, temperature-controlled circuit breaker to prevent motor burnout from overheating during prolonged use with thick or heavy mixtures. The motor will stop if overheated and typically cools within 10 minutes (up to an hour in extreme cases).
- Safety: Safety switches prevent operation if the work bowl or cover is not locked into position. The motor stops within seconds after being turned off, and a fast-stop circuit activates when the pusher assembly is removed. Blades are very sharp; handle with extreme care.
- UL Listed: For household use only.
- Maximum Rating: 6.0 amperes (based on attachment drawing greatest current).
Usage Features:
- Control Panel: Convenient push-button controls for "Off," "On," "Dough," and "Pulse."
- Assembly: Work bowl locks onto the housing base by turning counterclockwise. Blades/discs are placed over the center shaft and fit snugly. Cover locks onto the work bowl by turning counterclockwise. Pusher assembly slides into the feed tube, activating the motor upon contact with an activating rod.
- PULSE Button: Allows for precise control over chopping and mixing, ideal for coarse chopping or preventing overprocessing. Holding the button down provides continuous processing.
- DOUGH Button: Activates a specific dough process speed for optimal kneading with the PowerPrep® Metal Dough Blade.
- Feed Tube: The Supreme® Wide Mouth Feed Tube accommodates large items, while the small pusher and center-located feed tube are for narrow foods or adding liquids.
- Loading: For slicing/shredding, food should be cut to fit the feed tube and packed snugly to prevent tilting. For long slices, pack horizontally; for short shreds, pack upright.
- Removing Food: Always wait for blades/discs to stop spinning. Remove the work bowl from the base before removing blades to prevent leaks. Use the blade hub or a spatula to remove blades safely.
- Whisk Attachment: Assembles by inserting whisks into the power unit, locking the adapter onto the motor shaft, and then connecting the power unit to the adapter. Press the ON lever to activate.
- Dough Preparation: Use cold liquids (except for yeast activation) to prevent overheating the dough. Weigh flour for accuracy. Test yeast activity before use.
- Egg Whites: For best results, use room temperature eggs and ensure all tools are absolutely clean and free from grease. Add salt or cream of tartar for stabilization and sugar gradually.
Maintenance Features:
- Cleaning: All parts, except the housing base and the white power unit of the whisk attachment, are dishwasher safe (top rack recommended to prevent damage from intense water heat). The housing base and whisk power unit should be wiped clean with a damp cloth and dried immediately.
- Storage: Store blades and discs out of reach of children. Optional disc and blade holders are available for safe storage.
- Work Bowl Care: The Lexan® plastic work bowl is shatter and heat resistant but should not be placed in a microwave oven. Certain foods (ice, whole spices, coffee beans, wintergreen oil) may scratch or cloud the work bowl; a separate bowl may be desired for these.
- Base Cleaning: The smooth plastic base can be wiped clean. Rubber feet prevent movement and can be cleaned with a spot remover if they leave marks.
- Detachable Stem: Clean the inside by sliding the stem release button up and running water through it.
- Whisk Attachment Cleaning: Keep parts free of oil or grease to ensure optimal performance. Disassemble and thoroughly clean if whisks do not rotate or reverse direction.
- Unplugging: Always unplug the unit before removing food, cleaning, or putting on/taking off parts.
