For the Fried Chicken:
2 large boneless chicken breasts, cut into
small pieces
2 cups butter milk
1 cup all-purpose flour
½ cup cornstarch
2 teaspoons garlic powder
2 teaspoons smoked paprika
1 teaspoon salt
½ teaspoon onion powder
½ teaspoon freshly ground black pepper
2 cups vegetable oil
For the Maple Honey Butter:
¼ cup unsalted butter, softened
1½ tablespoons honey
1 tablespoon maple syrup
Pinch salt
For the Waffle Bites
1 cup flour
1 tablespoon sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg
1 cup milk
2 tablespoon melted butter
or vegetable oil
Chicken & Waffle Bites
Directions:
1. In a large bowl, coat chicken pieces with buttermilk. Stir well to make sure the
chicken is fully coated. Cover and refrigerate for 6 hours or overnight.
2. For the maple honey butter, add softened butter, honey, maple syrup, and salt
to a medium bowl and whisk until well combined. Set aside or refrigerate until
needed. Bring to room temperature before serving.
3. To cook chicken, combine our, cornstarch, garlic powder, paprika, salt, onion
powder, and black pepper in a wide bowl.
4. In a deep skillet or saucepan, heat oil over medium-high heat. Remove the
pieces of chicken from the buttermilk mixture, allowing the excess to drip off.
Coat each piece in the our mixture.
5. Carefully add each piece to the skillet or saucepan, being careful not to
overcrowd. Fry the chicken until golden, about 3-5 minutes per side, and
transfer to a towel-lined plate. Repeat with remaining chicken. Set aside.
6. To prepare wafe bites, follow the Classic Wafe Bites Recipe on Page 29.
7. Spread the maple honey butter over each wafe bite and top with a piece of
fried chicken. Drizzle with additional honey as desired.
8. Serve and enjoy this sweet and savory classic!
