Function Description

The Delfield 4400 Series Compact Refrigerators are commercial refrigeration units primarily used for storing food items at safe temperatures. They are available in various configurations, including models with doors and drawers, as well as units with salad tops, mega tops, and raised rail prep tables. The refrigeration system is designed to maintain internal temperatures between 36°F and 40°F (2°C to 4°C) in approximately one hour after being connected to power, assuming covers and doors are closed. Salad top units are specifically designed to maintain pan temperatures between 33°F and 41°F (1°C to 4°C) for up to four hours in an 86°F ambient room temperature, meeting NSF-7 requirements.

The units feature an electronic temperature controller that monitors evaporator temperature and compressor run time to manage defrost cycles. These cycles occur as needed, potentially every 45 minutes under heavy usage, and can last from 2 to 50 minutes. During a defrost cycle, the compressor shuts off until the evaporator coil temperature exceeds 41°F or a 50-minute time limit is reached. The evaporator fan operates independently and may cycle or pulse even when the compressor is off.

Usage Features

The refrigerators are intended for indoor use only and require a level, stable surface capable of supporting their weight. Proper air supply and ventilation are critical for safe and efficient operation, meaning vents must remain unobstructed, and the units should not be packed so full that air circulation is impeded. They are designed with a "front-breathing" mechanism, allowing them to be installed flush against a wall or built into a counter.

For units with pan capacities, it is recommended to operate them with all pans in place to prevent damage. Continuous opening and closing of doors will affect the unit's ability to maintain optimal refrigeration temperatures. The top section of salad and mega top units is not intended for overnight storage; products should be removed from pans, though empty pans can remain in the cabinet.

The temperature control for salad top units is located at the rear, with a factory setting of 37.5°F. An optional display can be added to the front nosing of the unit, with the control unit mounted on the back and connected via a cable.

Some models come with heavy-duty cutting board brackets, which are installed on the top and face of the unit. Rolling lids are also available for certain models, designed for easy installation and secure closure. Optional overshelves can be installed on top of the cabinet, secured with screws.

Maintenance Features

Regular maintenance is crucial for the longevity and efficient operation of the Delfield 4400 Series. The manual outlines daily, weekly, quarterly, and as-needed maintenance tasks.

  • Interior Cleaning: The interior can be cleaned with soap and warm water, or a non-abrasive liquid cleaner. Sharp objects or tools should never be used to remove ice or frost, nor should mechanical devices be used to accelerate defrosting.
  • Gasket Maintenance: Gaskets require regular cleaning with water and mild soap (non-citrus based) to prevent mold and mildew and maintain elasticity. They are dart style, easily removable without tools, and can be softened in warm water for reinstallation.
  • Preventing Blower Coil Corrosion: To prevent corrosion, acidic items like pickles and tomatoes should be stored in sealable containers, and spills should be wiped up immediately.
  • Exterior Cleaning: Exterior surfaces should be wiped with a damp cloth, rubbing with the grain of the stainless steel to avoid marring the finish. Greasy residues can be removed with mild dish soap and water. Abrasive cleaners, steel wool, or chlorinated/citrus-based cleaners should be avoided as they can damage the clear coating on stainless steel panels. Monthly cleaning of casters with a damp cloth is recommended to prevent corrosion.
  • Drawer Assembly Cleaning: Drawer assemblies are designed for easy cleaning. Both drawers and tracks are removable without tools and are dishwasher safe. They should be cleaned weekly with detergents and a soft bristle brush, removing any food and debris.
  • Quarterly Cleaning (Drain Lines): If water accumulates inside the unit, the interior condensate pan and exterior drain lines need cleaning. The interior drain pan and hose, located through a louver on the bottom interior of the cabinet, should be cleaned with a soft bristle brush. The exterior drain line, a clear rubber hose connected to a copper pipe behind the center panel, also needs inspection and cleaning. It is critical to properly reinstall the PermaGum insulator after cleaning to prevent warm air from entering the unit.
  • Condenser Coil Cleaning: To maintain proper refrigeration performance, the condenser fins must be cleaned of dust, dirt, and grease regularly, ideally monthly. A vacuum cleaner or stiff brush can be used. Failure to keep the condenser coil clean can lead to high temperatures, excessive run times, compressor failure, and may void warranties.
  • Doors/Hinges: Hinges may become loose over time with heavy use. Tightening the screws that mount the hinge brackets to the frame is necessary to prevent sagging doors and potential damage.

All maintenance and servicing work beyond basic cleaning should be performed by authorized service personnel. The on-site supervisor is responsible for ensuring operators are aware of the inherent dangers and proper operation of the equipment.
