Overview

The provided document is an owner's manual for the Kamado Joe Classic III, a ceramic kamado-style grill designed for a variety of cooking techniques.

Function Description:

The Kamado Joe Classic III is a versatile outdoor cooking appliance that utilizes hardwood lump charcoal as fuel. Its primary function is to provide a controlled, wood-fired cooking environment, allowing users to perform various culinary techniques such as grilling, searing, baking, roasting, and smoking. The ceramic construction of the grill is key to its performance, enabling excellent heat retention and distribution, which contributes to flavorful and tender results. The grill is designed to bring people together around the fire, emphasizing a slower, more connected cooking experience.

Important Technical Specifications:

  • Maximum Charcoal Capacity: 6 lbs (2.7 kg) for the Classic III. Overfilling the charcoal grate is cautioned against.
  • Temperature Range: The Kamado Joe Classic III can achieve temperatures ranging from 225°F to 750°F (105-400°C).
  • Cooking Temperatures by Technique:

Usage Features:

  • Air Lift Hinge: Pre-adjusted for ideal balance and stability, but can be adjusted to personal preferences using 7mm and 9/16 inch wrenches. Caution: Hinge is under high tension.
  • Kontrol Tower Top Vent & Bottom Vent: These act as a "volume dial" for the fire, controlling airflow to adjust temperature. Opening them increases airflow and temperature; closing them decreases it.
  • AMP FireBox: An internal architecture designed for optimal cooking conditions.
  • Divide & Conquer Flexible Cooking System: This innovative multi-level, half-moon design allows for simultaneous cooking using different heat zones (direct and indirect heat) and various cooking surfaces. It includes halved cooking grates and halved heat deflectors.
  • SlōRoller Hyperbolic Chamber: An accessory for smoking, designed to create a moist cooking environment and infuse food with smoky flavor. Installation involves removing the Divide & Conquer system, filling the firebox with charcoal and smoking wood, placing the SloRoller base ring, then the D&C system (without heat deflectors) on top, followed by the middle section and top plate of the SloRoller.
  • Slide-Out Ash Drawer: Simplifies ash removal and cleaning.
  • Cooking Surfaces: The manual describes various cooking surfaces, each suited for different purposes:
    • Standard Stainless Steel Grate: Durable, easy to clean, and versatile for a wide variety of foods. Heats up quickly and distributes heat evenly.
    • Cast Iron Grate/Griddle: Indestructible, withstands high temperatures, absorbs, retains, and conducts heat extremely well for high-heat searing, color, and caramelization.
    • Laser-Cut Stainless Steel: Double thick for durability, smooth surface for even heat distribution, protects fragile proteins, and ideal for roasting vegetables due to small slits.
    • Soapstone: Provides supremely even heat distribution, is bacteria- and stain-resistant, keeps meat and fish moist, and prevents flare-ups by radiating indirect heat.
    • Ceramic Pizza Stone: Offers superior heat retention and distribution for baking and browning, drawing moisture out of dough for a crunchy crust.
  • Temperature Control: Achieved by adjusting the top and bottom vents. It's recommended to set the bottom vent and fine-tune with the top vent. Allow 20-40 minutes for the grill to stabilize temperature after lighting.
  • "Burping" the Grill: When cooking above 350°F (175°C), partially open the lid 2-3 inches (5-8cm) for about 5 seconds before fully opening to prevent "flashback" (a surge of white-hot heat from a rush of oxygen).
  • Smoking Wood: A little goes a long way; 1 chunk for poultry/fish, 2-4 chunks for larger cuts of meat (over 6 lbs). Too much wood can lead to a bitter taste. No need for water pans for humidity.
  • Latch Adjustments: The latch is preset for an ultra-tight seal, but can be adjusted with a small allen wrench (right to tighten, left to loosen).

Maintenance Features:

  • Ash Removal: Charcoal can be re-used. Before each cook, stir charcoal to remove loose ash, then empty the ash from the Slide-Out Ash Drawer.
  • Self-Cleaning: The grill can be self-cleaned by burning off residue at 600°F (315°C) with the dome closed.
  • Cleaning Cooking Grates: Brush cooking grates with a standard grill brush after self-cleaning.
  • Cleaning Heat Deflectors: Heat deflector plates should be free of burned-on residue. Brush them down with a soft bristle brush after cleaning. Flip them over for the next cook to burn off residue from the other side.
  • Internal Cleaning: Once or twice a year, remove internal components and any residual ash or debris. Use a plastic bristle brush to clean the inside ceramic surface and a scoop or vacuum to remove debris from the bottom of the grill.
  • Gasket Care: Self-cleaning through natural heat cycle is recommended. Do not use chemical-based cleaners. Gently wipe off spills or moisture; do not scrub or abrade the gasket excessively to prevent wear.
  • Cooling Down: Close the bottom vent completely when finished cooking. Once the temperature falls below 400°F (205°C), close the top vent almost completely, leaving a small crack. Do not cover the grill until the dome is cool to the touch.
  • SlōRoller Storage: When not in use, the SlōRoller can be stored on the bottom shelf of the grill cart.
