Simple Vanilla Ice Cream
Ingredients Full cream milk 250mL
Caster sugar 175g
Salt Pinch
Vanilla extract ½ tbsp
Double cream (or thickened) 500mL
Method
In a bowl, combine the milk, sugar and salt and whisk, or beat using a hand
mixer on a low speed, until the sugar is dissolved.
Stir in the cream and vanilla extract, cover the mixture with cling wrap and
chill in the refrigerator for at least 4 hours.
With the paddle rotating, pour the mixture through the chute into the inner
bowl of the ice cream maker. Leave the machine churning until the mixture
has reached the desired consistency. If all ingredients were well chilled, and
the bowl thoroughly frozen, this should not take more than 15 to 30 minutes.
Custard Based Vanilla Ice Cream
Ingredients Egg yolks 2
Caster sugar 50g
Skim milk 200mL
Double cream (or thickened) 200mL
Vanilla extract ½ tbsp
Method
In a bowl, combine the egg yolks and sugar and whisk, or beat using a hand
mixer on a low speed, until the sugar is dissolved.
Bring the milk to boiling point in a saucepan, then pour it slowly onto the egg
mixture while beating to combine. Return the mixture to the saucepan and
stir constantly until the mixture thickens and forms a film over the back of a
spoon. Do not let it boil, or the mixture will separate. Remove from heat and
leave to cool.
When cold, stir in the cream and vanilla extract, cover the mixture with cling
wrap and chill in the refrigerator for at least 4 hours.
