Chocolate Gelato
Ingredients Full cream milk 3 cups
Caster sugar ¾ cup
Cornflour 2 tbsp
Pure cocoa powder, sifted ¾ cup
Method
• In a bowl, whisk together 1 cup of the milk with the sugar, cornflour and cocoa.
• Add the remaining milk into a saucepan and bring to the boil.
• Pour the milk over the chocolate mixture and stir to combine. Return to the
saucepan and stir over low heat for about 10 minutes or until thickened.
Remove from the heat and allow to cool.
• When cool, cover the mixture with cling wrap and chill in the refrigerator for
at least 4 hours.
• With the paddle rotating, pour the mixture through the chute into the inner
bowl of the ice cream maker. Leave the machine churning until the mixture has
reached the desired consistency. If the mixture was well chilled, and the bowl
thoroughly frozen, this should not take more than 15 to 30 minutes.
