A manual shut-off valve is required upstream from the manifold, within four feet (1.2M) of the appliance. The regulator can withstand a maximum pressure of 1½ PSI (14” WC); a step-down regulator is required if line pressure exceeds this limit.

Installation Requirements:

The appliance must be installed by a qualified installer in accordance with federal, state, and local codes, including National Fuel Gas Code ANSI-Z223.1/NFPA #54 (latest edition) and NFPA Standard #96 for Vapor Removal from Cooking Equipment. In Canada, CAN/CSA-B149.1 Natural Gas Installation and CAN/CSA-B149.2 Propane Installation Code apply. The unit requires proper ventilation and should be placed on a level, solid, nonflammable, nonskid surface. It is suitable for installation on non-combustible surfaces with zero clearance. Usage Features:

  • Top Burners: Each burner has a pilot light for ignition. To operate, turn the valve knob counterclockwise to the desired flame height (Max or Min). After use, turn the knob clockwise to the origin position to shut off.
  • Griddle Operation: Before first use, the griddle plate requires seasoning. This involves applying a thin film of high-quality cooking oil and heating the griddle at low flame for approximately 30 minutes, spreading the oil to prevent drying. This process is repeated 2-3 times, gradually increasing flame height, until a slick, mirror-like surface is achieved. The griddle is manually operated, meaning temperature is controlled by adjusting flame height, not by a thermostat. Preheating for 15-20 minutes is recommended before cooking.
  • Oven Operation: The oven is ignited by pressing and rotating the thermostat knob counterclockwise, then lighting the pilot flame through an access hole. The knob must be held down for 20 seconds to heat the thermocouple. The oven temperature can be controlled between 250°F and 550°F. A "burn off" period at 450°F is recommended for first use to eliminate manufacturing odors and smoke. The oven thermostat has a by-pass setting that may need adjustment by a qualified technician during installation or gas type conversion to ensure a stable minimum flame.

Maintenance Features:

  • Daily Cleaning:
    • Body: Clean stainless steel surfaces with a non-abrasive cleaner and a soft cloth, wiping with the grain.
    • Back and Side Splashes: Wipe with clean, warm mild soapy water, then re-wipe with a damp cloth.
    • Controls: Wipe control knobs with a clean cloth to remove grease or debris.
    • Griddle Plate: Clean with a grill pad or metal spatula. If necessary, use a griddle stone. Rub with the grain of the metal while warm. A mild soap can be used. After cleaning, cover with a thin film of oil to prevent rusting.
    • Catch Tray: Remove and discard waste, grease, debris, and crumbs.
  • Regular Cleaning:
    • Burners and crumb trays should be cleaned regularly.
    • Avoid abrasive detergents, brushes, scrapers, or chlorine cleansers on stainless steel surfaces to prevent rusting and damage.
    • Do not spray water directly on the unit, especially when hot.
    • Clean dirt off burners and baffles regularly.
    • Ensure burner holes are not clogged to prevent incomplete combustion.
