Fish, vegetables and meat should be coated before frying.
Use only metal cutlery. Plastic or rubber cutlery will be damaged in hot oil! Do not leave
cutlery in the fryer!
After each use, strain oil through a double thickness of cheesecloth/ fine sieve to remove the
accumulated residue.
The number of times the frying oil can be reused will depend on the food that is fried in it. It
will need to be replaced more often if coated fish or meat is fried.
It is time to replace the frying oil if any of the following occur: the oil is dark in colour, smokes
when it is heated, or foams excessively during frying.
