Overview

The Ovention Matchbox™ Oven is a commercial cooking appliance designed for speed, flexibility, and efficiency in both kitchen and front-of-house installations. It utilizes an innovative air handling system that not only accelerates the cooking process but also "scrubs" and recirculates air through the oven, often eliminating the need for a traditional hood system.

Function Description:

The Matchbox Oven is equipped with dedicated upper and lower heating elements and air blowers. These blowers direct heated air through upper and lower jet plates inside the oven chamber, above and below the food. A key feature is its innovative food transport system, a slider assembly with two separate cooking surfaces that moves back and forth into the oven chamber. This design allows for non-stop operation, as one cooking surface is always in the oven while the other awaits the next food item. Operators interact with the oven via icon-driven touchscreens, which allow for the use, editing, and development of over 1000 custom menu items. Menu items can be organized into Categories (up to 128 categories, each containing up to 128 specific menu items) or used as specific menu items only. Each menu item can be programmed with up to three cooking stages, each with varying heat profiles, upper and lower air velocity settings, and timing. The oven supports both single-item cooking and queued (continuous) cooking. A USB port is integrated for uploading pre-programmed menu items, installing software updates, and service diagnostics.

    • Pan Size Compatibility: Standard 1/2-size sheet pan (13"W x 18"D [330 x 457 mm]) Both models are designed to automatically adjust to either 208 VAC or 240 VAC input voltage. A minimum clearance of 1" (25 mm) along the sides and rear is required for proper ventilation. The unit is not weatherproof and must be located indoors where ambient air temperature is a minimum of 70°F (21°C).

Usage Features:

  • Touchscreen Controls: Two touchscreens, one for each cooking surface, provide an intuitive interface for operation and programming.
  • Standby Switch: Used to turn the oven on/off.
  • Main Disconnect Switch (M1718 only): A primary power switch.
  • Menu Item Programming: Users can create, edit, and store up to 1024 custom menu items, organized into categories. Each item can have up to three cooking stages with customizable heat profiles, air velocity settings, and timing.
  • Setpoint Temperature Control: The oven can store up to three setpoint temperatures, which can be selected and changed via the touchscreen. The oven takes 10-15 minutes to reach setpoint temperature, followed by a temperature stabilizing period.
  • Continuous Cooking: The dual cooking surfaces allow for continuous operation, where one item cooks while the next is prepared on the other surface.
  • Safety Features: Includes warnings for electrical shock, burn, and explosion hazards. The unit is designed for commercial cooking, not industrial or laboratory use. It is not intended for use by children or persons with reduced physical, sensory, or mental capabilities.
  • USB Port: Allows for easy uploading of pre-programmed menu items and software updates.

Maintenance Features:

  • Daily Cleaning:
    • Turn off the Standby switch and allow the unit to cool (cooling fans operate until the oven chamber temperature drops below 140°F/60°C).
    • Disconnect from power supply (unplug M1313, turn OFF Main Disconnect M1718).
    • Remove and discard food product.
    • Remove and clean cooking racks with a damp non-abrasive cloth or nylon scouring pad.
    • Remove spillages with a damp paper towel or non-abrasive cloth.
    • Remove and clean crumb trays.
    • Wipe down all exterior surfaces with a damp non-abrasive cloth, then dry with a non-abrasive dry cloth.
    • Polish exterior surfaces with a stainless steel cleaner.
  • Weekly Cleaning:
    • Follow daily cleaning steps 1-2.
    • Manually move the slider assembly to access all sides of the end caps and center divider.
    • Spray Chemco Dirt Buster III Oven Cleaner onto all sides of the two end caps and center divider on the slider assembly.
    • Clean with a non-abrasive nylon scouring pad, applying pressure to wipe away grease residue.
    • Wipe clean with a damp, non-abrasive cloth and allow to air dry.
  • Monthly Cleaning:
    • Follow daily cleaning steps 1-2.
    • Remove and clean the two air filters on the back of the oven by sliding them out, spraying with water and/or soaking in soap and water, rinsing, and allowing to air dry before reinstalling.
    • Remove and clean the upper and lower jet plates inside the oven chamber. Unlatch and open the oven door, remove plates by pulling handles straight out. Spray Chemco Dirt Buster III Oven Cleaner, allow to sit, then clean with a non-abrasive nylon scouring pad. Wipe clean with a damp, non-abrasive cloth and allow to air dry.
    • Clean visible areas of the oven chamber using the same procedure as for jet plates.
    • Reinstall jet plates, close oven door, and secure latches.
    • Perform the "Weekly Cleaning" procedure.
  • Important Cleaning Notes:
    • Use non-abrasive cleaners and cloths only.
    • Do not submerge or saturate with water, steam clean, or use excessive water.
    • Do not clean when energized or hot.
    • Do not use metal scouring pads, steel pads, wire brushes, or scrapers.
    • Wear protective rubber gloves and eyewear.
    • Improper cleaning or use of unapproved chemicals can damage the catalyst and void the warranty.
  • Troubleshooting: The manual provides a guide for common issues like the oven not operating, irregular slider movement, improper cooking, CHECK FANS indicator light on, and oven not heating, along with probable causes and corrective actions.
