Function Description:

The Pitco MGII Full and Split Tank Gas Fryers are commercial deep fryers used for cooking food in oil or shortening. They feature multiple fry tanks, allowing for simultaneous cooking of different products or larger batches. The computer controller manages the fryer temperature and provides cooking timers, ensuring consistent product quality. The fryers are designed with an integrated filtration system (if equipped) that allows for the filtering and reuse of cooking oil, extending its life and reducing waste. Gas is used as the heating source, controlled by gas valves and a pilot system.

  • Electrical Connection: Equipped with an oil-proof, electrical supply cord with a three-prong safety plug. Must be plugged into a properly grounded three-prong receptacle.
  • Wiring: All copper wiring for this appliance must be made in accordance with the wiring diagram(s) located on the appliance. If permanently connected to fixed wiring, copper wires must have a temperature rating of not less than 167°F (75°C).
  • Circuit Breaker (CE countries): A country-approved all-pole circuit breaker with a minimum open contact gap of 3mm must be used.

Usage Features:

  • Computer Controller: Controls fryer temperature and provides timers for cooking products. Operating instructions for the McDonald's Computer Controller are included separately.
  • Fry Tank: Holds oil/shortening at temperature for cooking.
  • Door: Provides access to the drain valve handle, tank drain outlet, high limit reset button, gas valve, pilot, burners, gas shut-off valve, and self-cleaning burner system (if equipped). For filter-equipped units, it also provides access to the filter pan, filter pump, and oil/shortening return handle.
  • Filter Pan Guide Rails: Guide the filter pan into place beneath the fryer.
  • Filter Pan (if equipped): Oil drains from the fry tank into the filter pan, where it is filtered through filter media before being pumped back to the fry tank.
  • Gas Connection: Quick disconnect connects the gas supply to the fryer battery.
  • Casters: Provide for height adjustment and mobility of the fryer system.
  • Data Plate: Located behind the door, provides important information including Model and Serial Number.
  • Basket Hanger: Used for draining baskets when removed from the fry tank.
  • Hood Seal Angle: Mates up to a matching angle on Universal ventilation hoods.
  • Splashback: A protective barrier at the rear of the fryer.
  • Drain Valve Handle (Blue): Controls the flow of oil/shortening from the fry tank to the filter pan.
  • Pilot: Ignites the main burners when the fry tank requires more heat.
  • Self-Cleaning Burner System (if equipped): Cleans the main burners when the fryer is turned on.
  • Burner(s): Heat the oil/shortening in the fry tank.
  • Gas Valve Knob: Controls the flow of gas to the pilot and burners. Turning it to OFF shuts off the gas supply.
  • Oil Return Handle (Red) (if equipped): Opens the return valve, starts the filter pump, and returns oil/shortening to the fry tank.
  • Manual Gas Shut-off Valve: Shuts off the supply of gas to the gas valve.
  • Filter Pump (if equipped): Pumps filtered oil from the filter pan back to the fry tank.
  • Filter Pump Reset Button (if equipped): Resets the pump motor thermal overload.
  • Filter Pump Circuit Breaker (if equipped): Interrupts electricity to the filter pump in case of an over-current condition.
  • Filter Pump Pick-up Connection (if equipped): Where the filter pan engages into the filter pump suction piping.
  • High Limit Reset Button: If the high limit trips, it can be reset after the oil cools.
  • Drain Line Downspout (3") (if equipped): Discharges draining oil into the filter pan. Can be swiveled up to permit draining oil for discard.
  • Filling the Fryer Tank: Can be filled with liquid shortening or solid shortening. When using solid shortening, it must be melted slowly to prevent damage to the appliance. Water can be used for initial adjustments, but the level must not go below the MIN LEVEL mark.
  • Appliance Start-up: Ensure the drain valve is closed and the tank is filled with oil/shortening. Open gas supply valves, turn the gas valve knob to ON, and press the "ON" button on the controller.
  • Appliance Shutdown: Two modes: STANDBY and COMPLETE. STANDBY mode removes the ability of the appliance's main burners to operate. COMPLETE shutdown turns off the gas supply and cleans the appliance.

Maintenance Features:

  • Daily Preventative Maintenance:
    • Filtering with a Filter Drawer: Slide out the filter pan, remove filtered residue, and check the filter media for clogging or tears. Replace if necessary. Clean the pickup tube screen. Remove baskets and use a clean-out rod and crumb scoop to remove excess crumbs from the tank bottom.
    • Draining and Cleaning: Slowly open the blue drain valve handle to drain oil. Use a cleaning brush to clean the tank sides. Pull the red return valve handle to start the pump and return oil, rinsing crumbs down the drain. Press the "ON" button for a 5-minute polish timer. Close the drain valve handle once the tank is clean and oil has returned. Add oil if necessary to the "OIL LEVEL" line.
    • Replacing Filter Media: Slide out the filter pan, lift out the paper retaining frame, and remove the old filter paper/pad. Place a new filter paper/pad and paper support screen, then reassemble.
  • Weekly Preventative Maintenance:
    • Draining the Tank: The drain filter line is used when draining the fryers. The drain valve is opened, and the drainspout is rotated up to drain oil into a container.
    • Cleaning the Fryer Tank: Turn off the fryer. Read the operation section for cleaning instructions. Scrub the tank, basket hanger, baskets, and temperature probe using a Scotchbrite™ or other abrasive pad with a commercial-grade cleaner. Rinse thoroughly with cool water.
    • Cleaning the Cabinet: The inside of the cabinet should be cleaned with a clean dry cloth to remove oil, dust, dirt, and cooking debris. The outside of the cabinet should be cleaned with a wetted cloth and mild detergent.
  • Monthly and Quarterly Preventative Maintenance: Focuses on preventing food debris and oil/shortening buildup.
  • Annual/Periodic Preventative Maintenance and Inspection: This should ONLY be performed by a qualified service technician at least once a year.
    • Temperature Probe & High Limit Probe: Verify good working condition, check for damage, tight fasteners, leak-free compression fittings, and tight electrical connections.
    • Controller: Verify good mechanical condition, proper light/display/switch operation, overlay for damage, tight electrical connections, and correct cooking temperatures.
    • Control Box & Electrical Components: Verify good condition of all components, tight wires, leak-free enclosures, safe covers/panels, and good power cord condition.
    • Tank: Verify good condition, check for grease buildup, corrosion, and leaks.
    • Drain System & Filter System (if equipped): Verify good drain valve condition, leak-free seal area, leak-free and kink-free drain/return lines, and secure clamps/connections.
  • Ventilation Hood: Proper operation is critical for appliance function and personnel safety. Regular inspection in accordance with ANSI/NFPA 96 and local codes is required.

Safety Warnings:

  • DO NOT sit or stand on the appliance.
  • DO NOT obstruct the flow of ventilation or air openings.
  • DO NOT install the appliance next to a water cooker or splash water over hot oil.
  • DO NOT tilt the appliance onto any two casters/legs or pull by the splash back.
  • DO NOT install legs or casters, or perform leveling when the appliance is in operation or full of hot liquids.
  • NEVER supply the appliance with a gas other than the one indicated on the data plate.
  • NEVER use an adapter to make a smaller gas supply line fit the appliance connection.
  • Connecting to the wrong power supply may damage the appliance and void the warranty.
  • DO NOT attempt to connect to an electrical supply other than indicated on the data plate.
  • The appliance must be grounded in accordance with local codes.
  • If the appliance uses line current, DO NOT cut or remove the grounding prong from the plug.
  • Ensure the ventilation system does not cause a down draft at the flue opening.
  • NEVER allow anything to obstruct the flow of combustibles or ventilation exiting the appliance.
  • When installed in McDonald's direct-coupled hoods, the appliance must be equipped with flue baffles. If not in a direct-coupled hood, flue baffles must be removed.
  • Oil/shortening or water must completely cover the heat tubes at all times while the appliance is on.
  • During operation, an open flame is inside the appliance; keep the area around it free from combustibles.
  • Be careful not to disturb the probe and high temperature limit during operation and cleaning.
  • Wear protective gloves, clothing, face shield, and oil-proof insulated gloves/sleeves/apron when cleaning, draining, or filtering.
  • DO NOT leave the appliance unattended during cleaning.
  • Use commercial-grade cleaner formulated for food contact surfaces.
  • NEVER run the filter system without filter media.
  • NEVER store the filter pan anywhere other than in the fryer filter cavity.
  • After filtering, parts of the filter system will be extremely hot; allow them to cool before handling.
  • The power supply must be disconnected before cleaning and servicing.
  • Hot oil can cause severe injury; always wear protective gear.
  • DO NOT leave the appliance unattended during cleaning.
